Gluten-Free Spinach Goat Feta Puff Pastry

Thank you, Schär Having to eat gluten-free (and dairy-free for awhile) usually meant bypassing some of the most delicious treats. And sometimes you just really miss those old comfort food classics. Lately, we have been trying a bunch of Schär gluten-free products and are just blown away. We found hamburger buns and puff pastry dough at Central Market. Then we tried the pizza crust found at Sprouts and were so excited about the taste and texture. I’ve been so happy with the products so far (btw – this is not a sponsored post)! They also have the best table crackers and artisan multigrain bread (also at Sprouts). It’s awesome. Brett loves the entertainment crackers (taste so much like Ritz) and they are perfect for dipping...

Gluten-Free Meatless Grilled Burgers

We grilled the gluten-free Beyond Meat plant-based burger patties and served them on Schär gluten-free hamburger buns and were totally impressed by both! The Beyond Burger So this isn’t a recipe or paid partnership – I just wanted to tell you how good these gluten-free meatless grilled burgers are! We are trying to eat less meat in general. And we plan a Meatless Monday dinner every week so I have lots of veggie dishes on the blog. My latest exciting copy cat was a veggie version of Southwestern Egg Rolls from Chili’s appetizer menu. There are awesome dips like pimento cheese or artichoke spinach dip. Fried goodies like fried artichoke hearts or fried mozzarella cheese sticks. Served up with a nice marinara sauce or yogurt...

Fried Artichoke Hearts | Gluten-Free, Dairy-Free

These gluten-free, dairy-free fried artichoke hearts are one of my absolute favorite treats! They are so good – everyone just gobbles them up. Gluten-Free Fried Artichoke Hearts I love fried foods.  Almost as much as meat and potatoes. Just recently, I actually, successfully made a chicken fried steak.  And I’ve tried many times before.  And that led to fried onion rings with left over batter. Yum! Sometimes we have fried chicken on a salad.  Sometimes it’s with eggplant for eggplant chicken Parmesan.  Or sometimes we have these fried artichokes as an appetizer or part of a meatless meal.  They are so easy to make and a perfect way to use up leftover marinara or pizza sauce. Yum! Instead of using panko which is not gluten-free,...

So you guys — this spinach artichoke dip is amazing!  Dreamy, creamy and clean eatin’ ! It has been far too long since we’ve indulged in artichoke dip and this “healthified” version did not disappoint.  Goat Cheese! I am loving being able to eat goat cheese!  I’m making so many old favorite comfort foods again.  Especially, dips and apps I haven’t had in forever.   I made fried goat mozzarella cheese sticks and buffalo chicken dip.  We even made pimento cheese with a smoky goat gouda. I started to try goat’s milk cheese and yogurt after learning that the casein protein is digested differently than that from cow’s milk (read more about why here).   When I found creamy goat cheese at Trader Joe’s similar in...

Crispy Parmesan Brussels Sprouts | Gluten-Free

Crispy Parmesan Brussels Sprouts These crispy Parmesan Brussels sprouts are one of the easiest and tastiest side dishes in our dinner rotation. Healthifying A Classic Comfort Food – Stuffed Peppers Today’s recipe is a healthier version of a classic comfort food staple – stuffed peppers.   Along with details of the things we change to clean it up.  Where the food comes from and what may be lurking along plays a role.   But first, let’s talk about the gut microbiome and lentils.  Because we are adding lentils to everything now! We add a lentils to our Healthified fried chicken salad or use them in a batch of home cooked black beans.
