Easy Meatless Monday Linguine | Gluten-Free

A quick and easy recipe for gluten-free Meatless Monday linguine made in the time it takes to cook the best gluten-free pasta from Bionaturae! Quick & Easy Linguine Perfect for Meatless Monday This has been one of our go-to Meatless Monday dishes.  And to be honest, it is a quick back up if I ever mess up something I’m cooking or a recipe turns out to be un-savable.   And it really only takes a few ingredients.  It’s a simple combo of Spaghetti Aglio e Olio and Cacio e Pepe.  Made with the best gluten-free pasta I’ve tried so far.   I really love the texture and taste of this Bionaturae gluten-free pasta!   It is made with organic rice flour, organic rice starch, organic potato...

Italian Veggie Popover Pizza | Gluten-Free

All the Veggies! We’re having a Veggie Potluck Party today to celebrate the release of The Casual Veggie Cookbook (no longer available for purchase)! And I’m bringing an Italian Veggie Popover Pizza.  It’s a casserole dish that tastes like a veggie pizza! Perfect for Meatless Monday dinners and a great way to use up some extra veggies. I found the original version of this recipe in the Old Farmer’s Almanac Garden Fresh Cookbook.   But of course, I made a few adjustments to make it gluten free (with an all-purpose gluten free flour) and used veggies I like better and usually have around. It’s pretty flexible and super easy! Lay all the veggies on a sheet pan and roast them in the oven with a...

Kale Pesto | Gluten-Free, Dairy-Free

Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! Or you can make it a pasta side dish with roasted spiced chicken or Italian turkey meatballs.  I’ve also used pesto on top of a cooked chicken breast and covered with bacon based on a dish I had years ago at Kerbey Lane.   There are so many...

Gluten-Free Veggie Sushi Made with Slice of Rice™

I was very excited to receive the Slice of Rice™ samples from Richard Cronk after connecting with him on Twitter @rhcronk.  We received a kit with the samples, several sheets of nori and a bamboo rolling mat. So this was our first time to make sushi at home and it was just so simple!   Each rice sheet has a specific side that sticks to the nori and is easily rolled with a bamboo rolling mat.   The rice tasted great with a hint of sweet organic rice vinegar. We made two types of veggie rolls: one with carrots, cucumber, scallion, avocado, red and yellow bell pepper; and the other with mango, avocado and pickled jalapenos (not very traditional but yummy nevertheless).   It was so...
