And I’m bringing an Italian Veggie Popover Pizza.  It’s a casserole dish that tastes like a veggie pizza! Perfect for Meatless Monday dinners and a great way to use up some extra veggies. Kale Pesto | Gluten-Free, Dairy-Free

Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! Gluten-Free Veggie Sushi Made with Slice of Rice™

I was very excited to receive the Slice of Rice™ samples from Richard Cronk after connecting with him on Twitter @rhcronk.  We received a kit with the samples, several sheets of nori and a bamboo rolling mat. So this was our first time to make sushi at home and it was just so simple!   Each rice sheet has a specific side that sticks to the nori and is easily rolled with a bamboo rolling mat.   The rice tasted great with a hint of sweet organic rice vinegar.
