Gluten-Free Eats in the ATX Hi everyone!  I made a list of our favorite gluten-free Mexican restaurants in Austin, Texas.  It’s really nice to live in a city with so many gluten-free options! Restaurant Style Tex-Mex Rice I love Tex-Mex (a fusion of American and Mexican cuisine).  It is hard to grow up in Texas and not love it.  And we have a lot of incredible Tex-Mex restaurants here in Austin that we frequent on the regular.   I mean what is not to love about enchiladas, tacos, chips and queso, guacamole, salsas, beans and rice.  And there are usually so many gluten-free options because of the corn tortillas.  Every place seems to have a slightly different version of beans on the side.  Sometimes refried beans and sometimes charro beans.  Then there is always the rice to go with it.   I’ve made a version of Mexican rice before with salsa and tomato sauce.  But I was super...

Gluten-Free Ranch Style Beans I’m not sure if it is just a Texas thing, but we love our Ranch style beans.   They are usually made with pinto beans, jalapeño, garlic, lots of spices, beef broth and tomato sauce.  They are savory with a little kick of heat and make a perfect side dish.   They especially make a great combo with restaurant style Tex-Mex rice (also very popular here in Texas).   And tasty beans and rice are a no-brainer for a Meatless Monday dinner.  So cheap and easy!  And tasty.   I also add them to my recipe for Bison Enchilada Soup.   We use them on Southwestern salads or in burrito bowls.  They are so good.   And they contain a lot...

What is a faux queso? Sometimes when you love to eat and cook, something magical can happen in the kitchen. Impromptu and divine. While Brett and I were making King Ranch Chicken Casserole and waiting for it to bake, we snacked on the extra corn tortilla scraps and used them to wipe up some of the leftover sauce in the Dutch oven. King Ranch Chicken Casserole We love King Ranch Chicken Casserole!   I used to make the Homesick Texan’s recipe all the time before I had to give up gluten and then eventually casein/dairy. It’s fancy and takes a little more work (because you make the sauce instead of using cream of mushroom soup). Well actually a lot of work and a lot of dishes are going to get dirty, but it is sooooo totally worth it.
