Gluten-Free Bison Meatball Stroganoff

This gluten-free bison meatball stroganoff is made with gluten-free fusilli pasta, spice mixture, mushrooms, beef broth, and goat’s milk skyr (Besos) from Bee Tree Farm. Gluten-Free Bison Meatball Stroganoff Beef stroganoff was one of my favorite dishes growing up. I would request it from mom all the time. Just loved that creamy wonderful sauce. I really did love sour cream a lot. It was just as hard to give up as cheese back in 2014. So of course, I do have an old tried and true recipe for “beef” stroganoff on the blog made with ground turkey that is gluten and dairy free. We use coconut milk, beef broth and cornstarch in the spices to create the creamy sauce. Quite honestly though, I’m getting kind...

spicy chicken spaghetti made with red sauce and jalapeños

Spicy Chicken Spaghetti | Gluten-Free, Dairy-Free

This recipe for spicy chicken spaghetti is super easy to make and packs a nice kick of spice from the jalapeños!  It is gluten-free, dairy-free and delicious. Spicy Chicken Spaghetti So I originally posted this recipe for spicy chicken spaghetti way back in March of 2015.  But I really thought it needed a little more love so it is getting an update with some new pictures and easy tips for success! I originally tasted this spicy chicken spaghetti at a friend’s house many, many years ago.  Her father, the Judge, made it for us while I was staying at their house for the weekend.  I couldn’t stop raving about it.  So he finally revealed the secret was adding pickled jalapeños to the spaghetti sauce.  OMG...

Gluten-Free Pasta Primavera

Gluten Free Pasta Primavera We really try to make sure we eat meatless on Mondays and cut back on how much meat we eat in general.   I love the Meatless Monday campaign.  If you haven’t checked it out yet, you really should.   Better for us and the planet. So one of our reoccurring dishes is Giada’s Pasta Primavera but we cut the recipe in half because I’m only cooking for two.   We use gluten free Ancient Grains Quinoa Garden Pagodas instead of regular pasta.   I absolutely love this gluten-free pasta primavera. It is so easy to make and filling and delicious.  You get lots of dietary fiber from the roasted veggies, complete protein in the quinoa pasta, and decadence with the Parmesan...

Baked Penne with Bison | Gluten-Free

Gluten-free Baked Penne with Bison So while everyone else is vowing to eat better this new year – I’m starting off the year making a bunch of pasta and goat cheese dishes. 🙂 Ever since we found bionaturae gluten free Italian pasta, I have been in pasta heaven.   The taste and texture really beats any of the other gluten free pastas I’ve tried so far.  It is made with organic rice, potato and soy.  And we love it! We use the pasta with goat cheese Alfredo sauce and one of our favorite original recipes for spicy chicken spaghetti. Of course you have to try the spaghetti with meatballs and red sauce, too. And we love the linguine with a little Parmesan, pepper, ghee and oil for...

Summer Pasta Salad | Gluten-Free, Dairy-Free

Summer Pasta Salad This summer pasta salad reminds me of my mom and summer and neighborhood block parties growing up.   It was her go-to signature potluck dish, which probably came off the back of a bottle of Kraft Italian salad dressing.  Regardless, it was always a hit and so simple to make.   Just cooked pasta, avocado, sliced pepperoni and classic Italian dressing!  Tossed together and chilled before serving.  That’s it! My husband loves it.  There is just something about that combo that is really decadent and it’s kinda hard to stop eating it. Over the years, I’ve added various ingredients like roasted or steamed Brussels sprouts, roasted red bell pepper, sweet mini peppers, banana peppers, peperoncino, or fresh herbs from the garden.  There...

Goat Cheese Alfredo Sauce | Gluten-Free

Why make a Goat Cheese Alfredo Sauce? Besides the fact that it is just really, really good… For people with casein digestion issues, it may add a whole new option to your dinner menu if you can tolerate goat’s milk! The protein casein in goat’s milk is processed, and likely digested differently, than casein from cow’s milk. You can read a little more about that in this post.  So I was really excited to make this simple Alfredo sauce with ghee, certified GF oat flour (you could probably use any GF flour that doesn’t contain xanthan gum), coconut milk, goat cheese, honey, salt and a pinch of paprika.  And not react to it. Imagine all the ways you could use it. Here we made an old...

The Gluten Free Weekly Menu May 4

May is Celiac Awareness Month! Celiac Disease Symptoms – Courtesy of Gluten Dude Here is the casein free, gluten free weekly menu for May 4, 2015. I will say that removing gluten from my diet changed my life. I’ll share more of my story soon, but in a nutshell I went from an ambitious, smart chic who landed her dream job as a biotech patent attorney, moved to Chicago, passed the bar and was ready to rock n’ roll. To a very, very sick girl who people/doctors thought developed a brain tumor and some strange autoimmune disorder on top of everything else. At one point, I thought I was going to die and I’d lay down on the hotel bed at night with my two...

gluten-free homemade meat sauce with mini lasagna noodles

Easy Meat Sauce | Gluten-Free

Easy Meat Sauce This easy meat sauce recipe with mini lasagna noodles is one of our favorite easy and tasty dinners. Start with cooking down onions and garlic, which are a great boost to the immune system.  Then add the ground turkey, chicken or bison and tomato sauce. You could just brown up the meat and add a jar of marinara sauce. But I love to add fresh garlic and onions whenever I can to a recipe.  They are a great source of dietary fiber our gut bugs need to thrive. And then to deepen the flavors we add some red wine, Italian seasonings, crushed red pepper and fresh basil. Serving it with these gluten-free mini lasagna noodles make it seem like a deconstructed version of...

Kale Pesto | Gluten-Free, Dairy-Free

Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! Or you can make it a pasta side dish with roasted spiced chicken or Italian turkey meatballs.  I’ve also used pesto on top of a cooked chicken breast and covered with bacon based on a dish I had years ago at Kerbey Lane.   There are so many...
