Gluten Free Fried Chicken Tenders Gluten free fried chicken!  Yum.  Who doesn’t love crispy chicken tenders? It’s one of our favorite comfort foods.   And this is such an easy recipe to prep and fry them up in a pan.   Crispy, delicious and probably a little healthier than what we used to eat. The trick is to brine the tenders in water and seasoned salt, then fry them in a mixture of coconut oil and olive oil.  Super simple.   You can use a GF all purpose flour like Bob’s Red Mill bean flour blend, but we really love the certified GF oat flour.  It has a nice, thick texture when fried. Healthified Gluten Free Snacking Who doesn’t love a platter full of good eats, especially on game day or when friends come over!   We love comfort foods but I’m always on the look out for the healthiest options that also fit within my dietary restrictions. Homemade Red Salsa Do you have a favorite recipe for red salsa? We’ve been playing around with different variations of homemade organic red salsa and I really like this one! It is easy and has a little kick to it. Since we are trying to keep it mostly organic we’ve used Muir Glen whole tomatoes, fresh organic peppers, onion, and garlic. Of course, you can add more peppers and different types to adjust the heat level, too.   We’ve also use fresh tomatoes as well and fire roast them with the other veggies.
