Gluten Free Fried Chicken Tenders | Gluten-Free, Dairy-Free

Gluten Free Fried Chicken Tenders Gluten free fried chicken!  Yum.  Who doesn’t love crispy chicken tenders? It’s one of our favorite comfort foods.   And this is such an easy recipe to prep and fry them up in a pan.   Crispy, delicious and probably a little healthier than what we used to eat. The trick is to brine the tenders in water and seasoned salt, then fry them in a mixture of coconut oil and olive oil.  Super simple.   You can use a GF all purpose flour like Bob’s Red Mill bean flour blend, but we really love the certified GF oat flour.  It has a nice, thick texture when fried. I usually take 2-3 boneless chicken breasts and cut them lengthwise into...

Healthy Gluten Free Snacks

Healthified Gluten Free Snacking Who doesn’t love a platter full of good eats, especially on game day or when friends come over!   We love comfort foods but I’m always on the look out for the healthiest options that also fit within my dietary restrictions. So that means everything we eat needs to be gluten free and casein free, while preferably antibiotic free, organic and non-GMO.   We want to feed our gut bacteria good stuff to keep us healthy and happy.   So on game day, I like to put out a platter of healthy gluten free snacks for us to munch on while the Longhorns play. Usually that means raw organic veggies and hummus, berries and nuts, Applegate pepperoni and salami (we usually...

We’ve been buying a new flavor from the store – Cilantro Jalapeño Hummus – and because I usually devour it in two days it was starting to get a little expensive.   So it was time to try to make it at home.   I like to add white beans to the hummus to make it a little creamier plus white beans are high in calcium. And I’m always looking for ways to naturally increase my calcium intake since I can’t eat dairy.  So I’ve been testing a few different batches using a basic hummus recipe I’ve used before – but changing up the spices and some of the...

Homemade Red Salsa | Gluten-Free, Dairy-Free

Homemade Red Salsa Do you have a favorite recipe for red salsa? We’ve been playing around with different variations of homemade organic red salsa and I really like this one! It is easy and has a little kick to it. Since we are trying to keep it mostly organic we’ve used Muir Glen whole tomatoes, fresh organic peppers, onion, and garlic. Of course, you can add more peppers and different types to adjust the heat level, too.   We’ve also use fresh tomatoes as well and fire roast them with the other veggies. So the secret is roasting the veggies under the broiler to get a little char before blending them together.   I saw someone else make it that way, so I had to try...
