Pimento Cheese #2 | Gluten-Free, Goat Cheese

Pimento Cheese Recipe #2 I love pimento cheese. I could eat an entire gallon of it in one setting. So I was really excited to be able to make it again when I started to use goat cheese in recipes that I used to make all the time. Like this Died and Went to Heaven Pimento Cheese. It’s really is just a combo of cheese, mayo, cream cheese, pimentos and a few other simple ingredients. The first time I adapted it using smoked gouda goat cheese. It added a nice smoky flavor. But I do miss the regular version. So I usually get my goat cheese like the pepper jack and smoked semi soft from Wheatsville. But a new neighbor told us that Central Market...

Easy Buffalo Chicken Dip | Gluten-free, Goat Cheese

Easy Gluten-Free Buffalo Chicken Dip There is nothing like starting off the new year with a Texas Longhorns win at the Sugar Bowl in NOLA!  Woo hoo!  I just love college football.  Hook ’em! And then there all the yummy game day eats.   And we love to indulge.  A favorite is definitely Buffalo chicken dip!    So I’ve decided I would start sharing some of my super simple and easy recipes this year even though they’ve been done before.  Mainly because I can eat goat cheese and Trader Joe’s makes a goat’s milk version of cream cheese which isn’t super tangy.   So we could bring back some favorites – this is definitely one of those.  Usually Buffalo chicken dip is made with: shredded...

“Healthified” Spinach Artichoke Dip | Gluten-free

So you guys — this spinach artichoke dip is amazing!  Dreamy, creamy and clean eatin’ ! It has been far too long since we’ve indulged in artichoke dip and this “healthified” version did not disappoint.  Goat Cheese! I am loving being able to eat goat cheese!  I’m making so many old favorite comfort foods again.  Especially, dips and apps I haven’t had in forever.   I made fried goat mozzarella cheese sticks and buffalo chicken dip.  We even made pimento cheese with a smoky goat gouda. I started to try goat’s milk cheese and yogurt after learning that the casein protein is digested differently than that from cow’s milk (read more about why here).   When I found creamy goat cheese at Trader Joe’s similar in...

Smoky Pimento Cheese | Gluten-Free, Goat Cheese

Smoky Pimento Cheese I love pimento cheese!  And I haven’t been able to make it or eat it since 2014 when I finally acknowledged that I just couldn’t handle dairy anymore.   In the old days, I used to make this killer recipe – Died and Went To Pimento Cheese Heaven! It’s not very good for you with all the cheese, cream cheese and mayo.  Served on white bread or crackers or fried into all types of amazing decadence.  All of those awful non-nutrient filled calories.   But you know what, I like to indulge once in awhile.  And I’m okay with that!   I don’t have a sweet tooth anymore, I just love decadent creamy cheesy goodness.  And I’m bringing it back because I...

Faux Queso | Gluten-Free, Dairy-Free

What is a faux queso? Sometimes when you love to eat and cook, something magical can happen in the kitchen. Impromptu and divine. While Brett and I were making King Ranch Chicken Casserole and waiting for it to bake, we snacked on the extra corn tortilla scraps and used them to wipe up some of the leftover sauce in the Dutch oven. And he said “this totally tastes like queso!”   And it actually did – from somewhere we’ve been before in the days when I could eat queso.  And I still can’t put my finger on it, but it did! His love of comfort food and ideas have propelled many of our efforts in the kitchen to recreate our favorite comfort foods while we...

gluten-free homemade cilantro lime hummus

Cilantro Jalapeño Hummus | Gluten-Free, Dairy-Free

Homemade Cilantro Jalapeño Hummus I love me some hummus! And I really like it flavorful and spicy. We’ve been buying a new flavor from the store – Cilantro Jalapeño Hummus – and because I usually devour it in two days it was starting to get a little expensive.   So it was time to try to make it at home.   I like to add white beans to the hummus to make it a little creamier plus white beans are high in calcium. And I’m always looking for ways to naturally increase my calcium intake since I can’t eat dairy.  So I’ve been testing a few different batches using a basic hummus recipe I’ve used before – but changing up the spices and some of the...

Homemade Red Salsa | Gluten-Free, Dairy-Free

Homemade Red Salsa Do you have a favorite recipe for red salsa? We’ve been playing around with different variations of homemade organic red salsa and I really like this one! It is easy and has a little kick to it. Since we are trying to keep it mostly organic we’ve used Muir Glen whole tomatoes, fresh organic peppers, onion, and garlic. Of course, you can add more peppers and different types to adjust the heat level, too.   We’ve also use fresh tomatoes as well and fire roast them with the other veggies. So the secret is roasting the veggies under the broiler to get a little char before blending them together.   I saw someone else make it that way, so I had to try...
