Pimento Cheese #2 | Gluten-Free, Goat Cheese

Pimento Cheese Recipe #2 I love pimento cheese. I could eat an entire gallon of it in one setting. So I was really excited to be able to make it again when I started to use goat cheese in recipes that I used to make all the time. Like this Died and Went to Heaven Pimento Cheese. It’s really is just a combo of cheese, mayo, cream cheese, pimentos and a few other simple ingredients. The first time I adapted it using smoked gouda goat cheese. It added a nice smoky flavor. But I do miss the regular version. So I usually get my goat cheese like the pepper jack and smoked semi soft from Wheatsville. But a new neighbor told us that Central Market...

Puff Pastry Beignets | Gluten-Free, Lactose-Free

Gluten-Free Puff Pastry Beignets Yes, please!  They were good.  Really, really good.   And it only took three ingredients to make these amazing little gluten-free puff pastry beignets.   We recently discovered that Schär makes a gluten-free puff pastry dough.  And it is lactose-free too (no dairy ingredients as far as I can tell).   I can’t even describe how excited I was. Right now the only place we could find it in Austin was at the Fresh Plus in Hyde Park and Central Market Westgate.   We don’t eat sweets often but when we do they usually have been dairy-free as well as gluten-free.  This dough is lactose-free so I think it is okay, too. I just love how these lemon ricotta cookies came out using Kite...

Hollandaise and Faux Béarnaise | Gluten-Free, Dairy-Free

Hollandaise and Faux Béarnaise So… here is the recipe for gluten-free, casein-free Hollandaise and faux Béarnaise sauce I promised you!   I love Hollandaise sauce but can’t eat the regular stuff anymore.   So we’ve adjusted it to be gluten-free and casein-free yet still rich, creamy and decadent. Instead of butter and cream we’ll be using coconut fat and ghee.  I’ve spent a lot of time over the years getting it just right. Yum! You really need a mini-prep for this because a blender is too big unless you double or triple the recipe.   Since we are cooking for two, we don’t make a lot of it.   But it does freeze really well.  So you could make a bigger batch, freeze it and...

Smoky Pimento Cheese | Gluten-Free, Goat Cheese

Smoky Pimento Cheese I love pimento cheese!  And I haven’t been able to make it or eat it since 2014 when I finally acknowledged that I just couldn’t handle dairy anymore.   In the old days, I used to make this killer recipe – Died and Went To Pimento Cheese Heaven! It’s not very good for you with all the cheese, cream cheese and mayo.  Served on white bread or crackers or fried into all types of amazing decadence.  All of those awful non-nutrient filled calories.   But you know what, I like to indulge once in awhile.  And I’m okay with that!   I don’t have a sweet tooth anymore, I just love decadent creamy cheesy goodness.  And I’m bringing it back because I...
