no cheese mini quiche with hash brown crust

No Cheese Mini Quiches | Gluten-Free

These easy No Cheese Mini Quiches with a hash brown potato crust are gluten-free, casein-free (using ghee) and perfect for breakfast during the week, brunch, or taking on a picnic. No Cheese Mini Quiches I found a great recipe for quiche with a hash brown crust on the Food Network. Then thought why not make little quiches like that as a finger food. I just love finger foods. Well these mini quiches are a tasty little treat and very versatile. You can add so many different ingredients as a filling. So I first made these while phasing out cheese before completely cutting dairy out of my diet (still using butter). But we use coconut milk creamer instead of milk or cream in the mini quiche....

ingredients for making carrot cake muffins

Carrot Cake Muffins | Gluten-Free, Dairy-Free

Gluten-Free Carrot Cake Muffins Who doesn’t love carrot cake?  And especially in the form of an easy-to-eat muffin! We love making homemade muffins from scratch.  They are much healthier than store bought muffins filled with preservatives, vegetable oil, and who knows what else. Some of our favorite muffins are filled with hidden veggies and a little more fiber filled flours, too.  Like Spiced Zucchini Muffins and the ever popular Chocolate Zucchini Muffins and Blueberry Muffins! And my weird little creation that turned out to be really yummy combo of sweet and savory – Sweet Potato Casserole Muffins. I found this recipe for carrot oatmeal muffins on allrecipes.com.  Then made a healthier gluten-free, casein-free version that tastes just as decadent. What we substituted to clean it up: a bean blend...

Sloppy Joes | Gluten-Free, Dairy-Free

Healthified Sloppy Joes I used to love when my mom made Manwich Sloppy Joes from the can growing up! I haven’t had one in years… but after watching Rachel Ray make them on the Food Network the other day, I just had to try a homemade gluten-free healthified version. To clean and lean up the recipe use: ground turkey, chicken or bison instead of ground beef tomato sauce and tomato paste from a jar (canned tomatoes can be problematic because BPA in the lining leaches into the acidic tomato sauces) gluten-free steak seasoning  organic red bell peppers, onions, and other ingredients when possible I cut the original Rachel Ray recipe in half because I’m only cooking for two.  And we ate them open-faced (well I...

Banana Oat Muffins | Gluten-Free, Dairy-Free

Banana Oat Muffins Today I’m sharing a recipe for gluten-free and dairy-free muffins.   I’ve been making different types of muffins and breakfast bars almost every Sunday for my husband’s breakfast during the week.   Some of his favorites are the chocolate zucchini muffins, sweet potato brownies, and cranberry oatmeal cookies (they make great bars, too). Even though he isn’t gluten-intolerant, I want them to be healthier than stuff you get at the store with preservatives, additives, hydrogenated oils and refined white sugar. I make them gluten-free and dairy-free so I can have a couple, too. He used to eat boxed mix cakes for breakfast in his bachelor days so we’ve come a long way.  He’s a picky eater but they got his stamp of approval!...

Bacon Brussels Sprouts | Gluten-Free, Dairy-Free

Bacon Brussels Sprouts This Brussels sprouts recipe has turned into one of our favorite side dishes.  It goes wonderfully with a Thai turkey burger and roasted sweet potatoes.  Or serve it with fried chicken tenders! It is a combo of two recipes I found on Pinterest from The Fit Cook and Heather Christo, which were both delicious. This version evolved because it was the easiest for me to make with what I usually have in the pantry and fridge. All you need for this are bacon, Brussels, celery and a simple vinaigrette. I make more than I need of the vinaigrette for this recipe because it keeps nicely.  I can use it again or with a lunch salad or on a sandwich.  The flavors get better...

cauliflower crab cakes

Cauliflower Crab Cakes | Gluten-Free

Cauliflower Crab Cakes What a fun recipe for cauliflower crab cakes.   Even though a few Pinterest recipes I’ve tried have been major fails (baked cheese sticks without the freezing directions, anyone? ;)) – others have been worth the effort.   A few weeks ago, we used a Pinterest recipe for Cheesy Cauliflower Pancakes. They were tasty, filling, and perfect for vegetarian night. Make them gluten-free by swapping out smashed up rice cereal for panko (and adding about one cup instead of a half cup).   I also prefer frying in coconut oil and butter.  Definitely will be making them again! Of course, my husband and I start brainstorming how they could be even better.  I rarely eat seafood, and I haven’t had a crab...

gluten-free chocolate zucchini muffins

Chocolate Zucchini Muffins | Gluten-Free, Dairy-Free

Chocolate Zucchini Muffins These gluten-free, dairy-free chocolate zucchini muffins are so easy to make and really delicious.   The hubs definitely approved of these for breakfast.   There are lots of flavor and nutritional goodies packed into a chocolaty muffin! I love hiding veggies inside of a sweet treat.  We have a wonderful recipe for spiced zucchini muffins, sweet potato brownies and carrot cake muffins.   I also like using sorghum flour and oat flour in the recipe because they contain dietary fiber. Most people with Celiac disease or on a gluten-free diet miss a good source of dietary fiber, especially if they turn to processed foods. Gluten is a protein found in wheat, barley and rye, which are also really good sources of dietary...

Cauliflower, Leek and Potato Soup | Gluten-Free, Dairy-Free

Cauliflower, Leek and Potato Soup I love soup!  And we eat soup often around here.  At least once a week, I’ll make up a big batch of soup and freeze some of it for lunches. I especially love chicken tortilla soup, red lentil and wild rice soup, and of course classic beef stew. But if I’m being honest, one of my favorite soups is Jean-Paul’s leek and potato soup from La Bonne Soupe.   I’ve never been to the bistro in New York, but I love the cookbook and make this soup often.   It is so rich and creamy and delicious! But in the spirit of eating healthier, I added cauliflower and adjusted the recipe to nix the cream, milk, and butter.   My...

gluten-free cranberry oatmeal cookies

Cranberry Oatmeal Cookies | Gluten-Free

Cranberry Oatmeal Cookies Who doesn’t love a chewy cranberry oatmeal cookie? Yum! Years ago, my husband’s step-mom made a “gluten-free” batch of cranberry oatmeal cookies for us and they were so good. Unfortunately, they made me really sick because we didn’t quite get the concept of cross-contamination or maybe one of the ingredients wasn’t gluten-free. She meant well and liked to entertain, but I would get sick almost every time we ate at their house. I’m very sensitive.  So we finally had a talk and explained why I couldn’t eat her stuff. Of course, after arguing with me and probably taking it personally – it ended. What else can you do? I need to take care of my body. And you can only be so...

gluten-free, dairy-free "beef" stroganoff

Gluten-free Dairy-free “Beef” Stroganoff

Gluten-free Dairy-free “Beef” Stroganoff One of my favorite dishes growing up was beef stroganoff.   I used to beg my mom to make if for dinner.  I think she used to make it with french onion soup mix and sour cream.  I’m not really sure. But I’ve tried to recreate a gluten-free dairy-free “beef” stroganoff making it a little healthier by using ground turkey instead of beef.   It is a very easy recipe and can all be combined and cooked in one pot.   I recreated the onion soup mix spices and use coconut milk or almond milk as a dairy free milk substitute.   Make sure all of your spices and ingredients are gluten-free, especially the cornstarch and beef bouillon.   I usually...
