Orange Marmalade Oatmeal Cookies | Gluten-Free, Dairy-Free

These orange marmalade oatmeal cookies are naturally gluten-free, dairy-free (ghee and coconut oil) and egg-free.  They are highly addictive and super easy to make from scratch. Gluten-free, Dairy-Free, Egg-Free Orange Marmalade Cookies It’s not something we make often, but I wanted to make a gluten-free Chicken L’Orange recipe for The Weekly Menu II eCookbook.  As a special treat for Christmas dinner.   So I found gluten-free marmalade (Bonne Maman) and the recipe only required two tablespoons.   You know I hate to waste food.   So what was I going to do with the rest of it?   I thought why don’t I adapt my recipe for cranberry oatmeal cookies into some type of orange marmalade oatmeal cookies.   And on the first try they...

Kale Pesto | Gluten-Free, Dairy-Free

Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! Or you can make it a pasta side dish with roasted spiced chicken or Italian turkey meatballs.  I’ve also used pesto on top of a cooked chicken breast and covered with bacon based on a dish I had years ago at Kerbey Lane.   There are so many...

Ghormeh Sabzi (Persian Herb Stew) & Basmati Rice | Gluten-Free, Dairy-Free

Ghormeh Sabzi is a traditional Persian Herb Stew made with various herbs and veggies, beans, stew beef, and dried sour limes. It is naturally gluten-free and dairy-free. For the Love of Persian Food My mother was Persian and growing up it was a huge treat when she would cook a traditional Iranian dish because she was pretty westernized and preferred not spending too much time in the kitchen.   Oh but when my grandmother would visit, we would feast the entire time – she loved to cook all day.  We had several favorites and it was amazing how much work she would do to make us happy.  The soups and stews and rice.  Oh my! One of my absolute favorite things to eat are stuffed...

homemade black bean soup made from scratch

Black Bean Soup | Gluten-Free, Dairy-Free

Black Bean Soup Some of the most simple ingredients can make a pretty tasty dish.   This is a flavorful and nutritious soup that is best when made from scratch (no canned beans or tomatoes) and it is naturally gluten-free, dairy-free and low-sodium. I never realized how much sodium was found in canned beans.  And it is hard to find organic canned beans.  So we decided to make our own black beans from scratch.   You do have to soak them overnight and then cook them for about an hour. For this recipe, we just make a small batch of black beans. But if you are putting in the effort, you could always increase the amount of beans and other ingredients.  Although it will take...

Singapore Street Noodles | Gluten-Free, Dairy-Free

Singapore Street Noodles This delicious recipe for Singapore street noodles is simple and easy to prepare.   This has quickly become one of our favorite go to dinners and ends up on the weekly menu often. It’s so tasty! The Asian flavors are big and bold.   We’ve been having fun making pasta dishes with these Pad Thai rice noodles.  Like pasta carbonara and kale pesto pasta. To make sure the recipe is gluten-free and dairy-free, use coconut aminos or gluten-free soy sauce. The red curry paste is gluten-free and does not contain preservatives. I found the original recipe from EZ Gluten-Free, which is a copy cat of PF Chang’s street noodles. I just changed out a few things. You start out with a few natural...

green beans tossed in vinaigrette with toasted walnuts and fried shallots

Fancy Green Beans | Gluten-Free, Dairy-Free

Fancy Green Beans Perfect for the holidays, these fancy green beans are dressed up with fried shallots, toasted walnuts and tossed in a simple red wine vinaigrette. This green bean dish is a healthy alternative to the traditional green bean casserole served during the holidays. Instead of using canned cream of mushroom soup and fried onions that aren’t gluten-free, we use healthier and leaner ingredients.   If you are looking for other gluten-free Thanksgiving recipes check out the perfect roasted turkey recipe and our awesome recipe for really good gluten-free stuffing. The nice thing about this dish, is that it is so quick and super easy. But you get lots of flavor and texture. Plus it is naturally gluten-free, dairy-free and casein-free. Make sure you...

Gluten-Free Veggie Sushi Made with Slice of Rice™

I was very excited to receive the Slice of Rice™ samples from Richard Cronk after connecting with him on Twitter @rhcronk.  We received a kit with the samples, several sheets of nori and a bamboo rolling mat. So this was our first time to make sushi at home and it was just so simple!   Each rice sheet has a specific side that sticks to the nori and is easily rolled with a bamboo rolling mat.   The rice tasted great with a hint of sweet organic rice vinegar. We made two types of veggie rolls: one with carrots, cucumber, scallion, avocado, red and yellow bell pepper; and the other with mango, avocado and pickled jalapenos (not very traditional but yummy nevertheless).   It was so...

Pasta Carbonara | Gluten-Free

Pasta Carbonara One of our favorite dishes during the comfort food years before I had to nix gluten was pasta Carbonara.   It is so decadent and creamy and wonderful.   The recipe isn’t different but the problem was that most of the gluten free pasta available made it turn out pretty gross.   Then we found Pad Thai GF rice noodles!   And they worked  to make this pasta Carbonara awesome again.   Rice noodles are a perfect way to make a more traditional textured and decadent pasta Carbonara than I’ve been able to recreate with other types of GF pastas.   It’s so yummy!  And so easy, too. toasted ciabatta, roasted halloumi and marinated roasted peppers

Caper Basil Vinaigrette Roasted Pepper Toasts | Gluten-Free

Caper Basil Vinaigrette Roasted Pepper Toasts  Updated 2017:  One of the things that I love most about having a food blog is that I can keep track of our favorite recipes and change them as we evolve and learn more about what we are eating and how it affects our digestion and health.  And sometimes it is as simple as finding new ingredients. Years ago, I found this simply delicious recipe from Bobby Flay. I made a similar version with roasted mini sweet peppers and mozzarella drizzled in the caper basil vinaigrette on gluten free toasted bread and it was so wonderful.   Back then I stopped eating gluten but I could still eat cheese.  Then a few years later, I realized that cheese was...

no cheese mini quiche with hash brown crust

No Cheese Mini Quiches | Gluten-Free

These easy No Cheese Mini Quiches with a hash brown potato crust are gluten-free, casein-free (using ghee) and perfect for breakfast during the week, brunch, or taking on a picnic. No Cheese Mini Quiches Well these mini quiches are a tasty little treat and very versatile. I found a great recipe for quiche with a hash brown crust on the Food Network. Then thought why not make little quiches like that as a finger food. So I made these while phasing out cheese before completely cutting dairy out of my diet. We use coconut milk or coconut milk creamer instead of milk. Use ghee instead of butter to remove all the dairy ingredients.
