There is nothing better than fresh homemade bread out of the oven! I make my own hamburger buns and freeze them for when we need them.   They are perfect with Asian turkey burgers, or with turkey meatballs and red sauce as meatball sandwich or when we make sloppy Joes. Spinach Salad with Warm Bacon Dressing Spinach salad is a great way to eat lots of fresh spinach!  And even better when tossed in this delicious warm bacon dressing from Alton Brown. Bacon makes everything better, right (uncured, nitrate-, nitrite-free bacon, of course)!  For this salad the bacon fat is reserved to make the vinaigrette.   There are a couple ways to cook the bacon. Spread the bacon out on a foil-lined baking sheet and place in the oven at 350 degrees F.  Or cook the bacon in a skillet on the stove top over medium heat. Cider-Brined Pork Tenderloin I’m not gonna lie, this cider-brined pork tenderloin with roasted apples and carrots is ridiculously delicious!  It is truly the best pork tenderloin I’ve ever had.   And tossing the apples and carrots in lemon juice before roasting them makes for a tangy and sweet side that goes so nicely with the pork. We all know how well apples go with pork chops, but brining this tenderloin in apple cider takes it to another level.  And leftovers are amazing the next day. Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday!
