Gluten Free Recipes & Menu Plans

The Weekly Menu April 24, 2017

Well it’s finally time for the Austin Food & Wine Festival again.   And I’ve only got one more week and one final exam to go and I’m done with the genomics certificate school stuff!   And it’s my birthday.  45 years old.  Wow!  So much to reflect on and to look forward to as well. And the garden is doing really well this year, too.   I have a lot to be grateful for, including my wonderful husband and our sweet, hilarious little dog.  And lasagna.   We made a lasagna last week and it was really, really good.  It isn’t easy when you have to work around almost all dairy but it worked since I can tolerate goat cheese and Parmesan. So we are...

The Weely Menu April 17, 2017

Hi all!  Guess what time it is?  Weekly menu time!  The is the weekly menu for April 17 – 23, 2017. For the most part, we’ve got pretty simple gluten and dairy free dinners planned for the week.  But I’ve been craving lasagna.  It’s probably been about 4 years since I’ve had lasagna.  And since I’ve brought goat cheese back into my diet because the casein is digested differently than cow’s milk casein.  We thought we might give it a shot. I really like the goat’s milk “cream cheese” from Trader Joe’s because it isn’t as strong as regular goat cheese.  So I thought it might make a good ricotta substitute.  And now there are so many vegan mozzarella options so we might try one...

sweet and spicy cabbage made with ghee, hot sauce and maple syrup

Roasted Sweet & Spicy Cabbage | Gluten-Free, Dairy-Free

Roasted Sweet & Spicy Cabbage This roasted sweet & spicy cabbage has quickly turned into one of our favorite side dishes!   And it is so easy to make you don’t even need a recipe.  Basically, it is just organic cabbage tossed in ghee and your favorite hot sauce, roasted, then drizzled with maple syrup. We like to use a local brand of hot sauce called Yellowbird Jalapeño Sauce but there are so many gluten free spicy sauces you can try!   Franks RedHot, Sriracha, Cholula… Of course, if butter doesn’t bother you then you can substitute that for the ghee (which I use because it doesn’t contain casein). I just cut up the cabbage. Pour melted ghee over the cabbage and then heavily drizzle...

The Weekly Menu April 10, 2017

I’m pretty excited about the gluten free weekly menu plan for this week of April 10 – 17. It’s full of flavor and spice and everything nice.  🙂 When you are limited with dietary restrictions, spices make everything better.  I love the bulk organic spices we find at Wheatsville Food Co-op. Of course, almost everything is also non-GMO, organic and dairy free (except for the Parmesan cheese)!   I really love that we can find so many clean and healthy options at our Wheatsville! Hopefully you are enjoying the spring time and lovely weather.  I love getting outdoors and going for nice long walks.   I’ve been listening to the musical Hamilton while walking.  So fun! We even bought theatre tickets for this season, so we...

The Weekly Menu April 3, 2017

Alright, alright, alright.  It’s weekly menu time again.   And my favorite month and time of the year is here!  I love April.   A few grapes are growing on the Zinfandel vine, the roses are blooming, my cucumber vines are growing strong.  Grow little plants grow!   I love having cukes fresh off the vine. Let’s just hope the Wine & Food Festival doesn’t get rained out this year.   And that I finish out the school year strong!  I have learned so much about food microbiology this year that my head is spinning.   Did you know you could get botulism from a potato baked in foil? It’s okay if you take the foil off when it comes out of the oven but...

The Weekly Menu March 27, 2017

Hi everyone!  Time for the weekly menu March 23 – April 2.     Last week, we tried a few new recipes while I was on Spring Break.  It’s always nice to change things up a bit. We met up with friends at Grizzelda’s Restaurant, too.  I’ve been dying to check it out.  It is such a beautiful space and most of the menu is gluten free but the dedicated fryer may not be safe.   I’ll add it to my list of gluten free places to eat in Austin soon, with details of what we had for dinner. So school is almost over – it is starting to wear me down, but it’s almost over.   And I just have to say that I...

Gluten Free Fried Chicken Tenders | Gluten-Free, Dairy-Free

Gluten Free Fried Chicken Tenders Gluten free fried chicken!  Yum.  Who doesn’t love crispy chicken tenders? It’s one of our favorite comfort foods.   And this is such an easy recipe to prep and fry them up in a pan.   Crispy, delicious and probably a little healthier than what we used to eat. The trick is to brine the tenders in water and seasoned salt, then fry them in a mixture of coconut oil and olive oil.  Super simple.   You can use a GF all purpose flour like Bob’s Red Mill bean flour blend, but we really love the certified GF oat flour.  It has a nice, thick texture when fried. I usually take 2-3 boneless chicken breasts and cut them lengthwise into...

The Weekly Menu March 20, 2017

Hi all! I’m officially on Spring Break this week so we are going to be cooking up a storm in the kitchen!   This is going to be a fun weekly menu plan because I have so many new recipes I can’t wait to try.   Usually I get in a rut and end up putting the same thing on the menu over and over each week.   It’s because I know that either Brett and I can execute them without fail. And I know how long it will take and the relative ease.  Plus I have already scaled down the recipe and know I won’t have a bunch of uneaten food in the fridge. But I do like to experiment with new recipes when...

The Weekly Menu Feb 27, 2017

Hi everyone!   Time for the weekly menu Feb 27 – March 5. Well it’s another day in the life of someone with ridiculous digestion issues and another weekly menu to help get me through it!   These last few weeks we really pinpointed one of the bad actors in our diet – xanthan gum!   I’m pretty much the canary in the coal mine when it comes to things you probably shouldn’t eat… Brett also has issues with xanthan gum but not as severe as mine.  It makes my stomach so hard and bloated and then my system has to process it.   I don’t feel like I absorb any nutrients.  Then  I start cramping and have to put on my fat clothes for...

The Weekly Menu Feb 13, 2017

Hi everyone!  Time for the gluten-free weekly menu Feb 13 – 19.   Things are getting really busy with school and I’m going to need these menus to get me through!   I’ve set up menu plans for the next three weeks that have really easy recipes.   When you get into the practice of menu planning, it makes it easier every time.   And since Brett and I cook together all the time, there are recipes that he is really good at that he can cook. Some of his go-to recipes are tacos and all the fried foods like: fried artichoke hearts chicken tenders fried goat cheese mozzarella sticks  roasted chicken and veggies Basically a bunch of stuff that Brett likes to cook or that...
