Happy Memorial Day weekend everyone!   So I’m working on a new recipe I’m pretty excited about and should have it ready on Tuesday.   You know how much I miss queso and cheesy goodness, well I may have an actual substitute for us folks that can’t eat dairy!  A gluten-free, dairy-free faux queso. It is inspired by the sauce we use in the recipe for King Ranch Casserole. There is not much else really going on right now.  Just a lot of cooking and experimenting in the kitchen. We’re going to see Something Rotten this week.  It is supposed to be pretty funny.  I’m really glad we have season tickets to the theater.  I’m looking forward to so many of the shows this season....

Hi everyone!  It’s time for the weekly menu again.  We have some oldies but goodies planned for the week.  Yum! So I officially graduate with a 4.0 from Johns Hopkins University this week and a Certificate in Genomics and Sequence Analysis.  And I can actually assemble short sequence reads into genomes!?  Crazy cool.  Now the job search has begun… Meanwhile, I love cooking healthy meals with lean proteins, healthy grains and veggies while finding new recipes to convert or a fun new sauce we can test out.  It’s fun to focus on food again! So the menu planning helps us save money and time while really reducing food waste.  And we’ve been able to go out at least once a week to try out some of...

Happy Mother’s Day to all you wonderful moms and daughters!   It’s hard to believe my mom passed 24 years ago and I’ve lived more than half of my life without her.  I still miss her but it is especially weird that I am nearing the age that she died. But I’m lucky to have had her for as long as I did and I certainly wouldn’t be the person I am today without her unconditional love and joyful, kind spirit. And her wonderful sense of humor. So it’s menu time again and here we go! The Clean Eating Weekly Menu May 8-14

Hi everyone!   Hope you are having a great week.  Time for this week’s clean eating weekly menu! So things have been really nice the last few weeks catching up with great friends and eating out at restaurants around town.   Recently we’ve been to Grizzelda’s, Alcomar, Manuel’s and Lambert’s Downtown BBQ. Check out my growing list of gluten-free restaurants in Austin! It has become so easy to eat gluten free around here.   Honestly, most places just point out the few things you can’t have and whether the fryer is dedicated or cross contaminated.  Lots of places make homemade corn tortillas, too.  Yum! And it was lovely sipping sangria on the patio at the W on Saturday afternoon.  I really LOVE their red sangria!...

Hi everyone! Hope your week is starting off great!  Well we had a blast at the annual Food & Wine Fest here in Austin. Such a great group of friends that get together over the last 10 years for the festivities.  It’s pretty awesome.  And there were so many bites that were gluten free it was really nice.  SO much wine and cucumber vodka – I should probably detox. 🙂  Definitely having a little booch today… I was excited to try Alcomar for the first time on Friday, too.  It was fantastic.  They serve mainly seafood and they only have corn tortillas so it is safe for gluten-free folks.  I tried the pork shank carnitas, which were delicious.  And they have some pretty great drinks,...

Well it’s finally time for the Austin Food & Wine Festival again.  And I’ve only got one more week and one final exam to go and I’m done with the genomics certificate school stuff!   And it’s my birthday.  45 years old.  Wow!  So much to reflect on and to look forward to as well. And the garden is doing really well this year, too.  I have a lot to be grateful for, including my wonderful husband and our sweet, hilarious little dog.  And lasagna.  We made a lasagna last week and it was really, really good.  It isn’t easy when you have to work around almost all dairy but it worked since I can tolerate goat cheese and Parmesan. Hi all!  Guess what time it is?  Weekly menu time!  For the most part, we’ve got pretty simple gluten and dairy free dinners planned for the week.  But I’ve been craving lasagna.  It’s probably been about 4 years since I’ve had lasagna.  And since I’ve brought goat cheese back into my diet because the casein is digested differently than cow’s milk casein, we thought we might give it a shot. I really like the goat’s milk “cream cheese” from Trader Joe’s because it isn’t as strong as regular goat cheese.  So I thought it might make a good ricotta substitute.  And now there are so many vegan mozzarella options so we might try one of those or use the original Field Roast Chao Cheese.  I...

Roasted Sweet & Spicy Cabbage | Gluten-Free, Dairy-Free

Roasted Sweet & Spicy Cabbage This roasted sweet & spicy cabbage has quickly turned into one of our favorite side dishes!  And it is so easy to make you don’t even need a recipe.  Basically, it is just organic cabbage tossed in ghee and your favorite hot sauce, roasted, then drizzled with maple syrup. We like to use a local brand of hot sauce called Yellowbird Jalapeño Sauce but there are so many gluten free spicy sauces you can try!   Franks RedHot, Sriracha, Cholula… Of course, if butter doesn’t bother you then you can substitute that for the ghee (which I use because it doesn’t contain casein).  I just pour melted ghee over the cabbage and then heavily drizzle with hot sauce.  Sprinkle with...

I’m pretty excited about the gluten free weekly menu plan for this week.  It’s full of flavor and spice and everything nice.  🙂  When you are limited with dietary restrictions, spices make everything better.  I love the bulk organic spices we find at Wheatsville Food Co-op. Of course, almost everything is also non-GMO, organic and dairy free (except for the Parmesan cheese)!  I really love that we can find so many clean and healthy options at our Wheatsville! Hopefully you are enjoying the spring time and lovely weather.  I love getting outdoors and going for nice long walks.  I’ve been listening to the musical Hamilton while walking.  So fun! We even bought theatre tickets for this season, so we can be first in line next season...

Alright, alright, alright.  It’s weekly menu time again.  And my favorite month and time of the year is here!  I love April.  A few grapes are growing on the Zinfandel vine, the roses are blooming, my cucumber vines are growing strong.  Grow little plants grow!  I love having cukes fresh off the vine. Let’s just hope the Wine & Food Festival doesn’t get rained out this year.  And that I finish out the school year strong!  I have learned so much about food microbiology this year that my head is spinning.  Did you know you could get botulism from a potato baked in foil?
