Why make a Goat Cheese Alfredo Sauce? Besides the fact that it is just really, really good… For people with casein digestion issues, it may add a whole new option to your dinner menu if you can tolerate goat’s milk! Happy Father’s Day to all you awesome dads out there!   Hope your families are treating you well. 🙂 The weekly menu for June 19, 2017 is pretty standard gluten-free “healthified” comfort food.   Pasta for Meatless Monday, tacos on Tuesday, a weekly salad with summer fruit and fried goat cheese croutons, mini personal pizzas, gumbo, and stuffed bell peppers. I am going to freeze the goat cheese, coat it in organic brown rice cereal ground into a panko-like texture, and then fry it in a blend of coconut oil and olive oil. Hello summer!   So what are our food choices for this week of summer? Well one of the things I love about summer are all the fruits in season.  What do you have planned for all the goodness upon us?   For sure we are making a peach cobbler with all the peaches in season.   And definitely a mango salsa.   Since our jalapeño plant in the backyard is full of jalapeños,  I’m trying to use some of those up this week, too. Faux Queso | Gluten-Free, Dairy-Free

What is a faux queso? Sometimes when you love to eat and cook, something magical can happen in the kitchen. Impromptu and divine. While Brett and I were making King Ranch Chicken Casserole and waiting for it to bake, we snacked on the extra corn tortilla scraps and used them to wipe up some of the leftover sauce in the Dutch oven. Happy Memorial Day weekend everyone!   Time for the weekly menu for May 29 – June 4.   So I’m working on a new recipe I’m pretty excited about and should have it ready on Tuesday.   You know how much I miss queso and cheesy goodness, well I may have an actual substitute for us folks that can’t eat dairy!  A gluten-free, dairy-free faux queso. Hi everyone!   It’s time for the weekly menu again for May 22-28.  We have some oldies but goodies planned for the week.  Yum! So I officially graduate with a 4.0 from Johns Hopkins University this week and a Certificate in Genomics and Sequence Analysis.   And I can actually assemble short sequence reads into genomes!   Crazy cool.  Now the job search has begun… Meanwhile, I love cooking healthy meals with lean proteins, healthy grains and veggies while finding new recipes to convert or a fun new sauce we can test out.   It’s fun to focus on food again!
