spiced potato wedges with vegan nacho cheese and spicy jalapeño slices

Spiced Potato Nachos | Gluten-Free, Dairy-Free

These organic, gluten-free spiced potato nachos are made from Russet potatoes, sprinkled generously with spices and covered in vegan cheese and spicy hot jalapeños. Gluten-Free Spiced Potato Nachos One of the things that has gotten me through all of my dietary restrictions is that I used to be able to eat a lot of things.  And now I just try to recreate those comfort food things within my restrictions while cleaning ’em up (organic, non-GMO) where I can. So this combo has become a huge hit around here.  It reminds me of the potato wedges at Fuddruckers.   They were nice thick wedges covered with a little spice.  Oh and then to drench them in the nacho cheese.  Add a few pickled jalapeños.  Ah, the...

A quick and easy recipe for gluten-free Meatless Monday linguine made in the time it takes to cook the best gluten-free pasta from Bionaturae! Quick & Easy Linguine Perfect for Meatless Monday This has been one of our go-to Meatless Monday dishes.  And to be honest, it is a quick back up if I ever mess up something I’m cooking or a recipe turns out to be un-savable.   And it really only takes a few ingredients.  It’s a simple combo of Spaghetti Aglio e Olio and Cacio e Pepe.  Made with the best gluten-free pasta I’ve tried so far.   I really love the texture and taste of this Bionaturae gluten-free pasta!   It is made with organic rice flour, organic rice starch, organic potato...

Restaurant Style Tex-Mex Rice | Gluten-free, Dairy-free

Restaurant Style Tex-Mex Rice I love Tex-Mex (a fusion of American and Mexican cuisine).  It is hard to grow up in Texas and not love it.  And we have a lot of incredible Tex-Mex restaurants here in Austin that we frequent on the regular.   I mean what is not to love about enchiladas, tacos, chips and queso, guacamole, salsas, beans and rice.  And there are usually so many gluten-free options because of the corn tortillas.  Every place seems to have a slightly different version of beans on the side.  Sometimes refried beans and sometimes charro beans.  Then there is always the rice to go with it.   I’ve made a version of Mexican rice before with salsa and tomato sauce.  But I was super...

homemade gluten-free ranch style beans

Ranch Style Beans | Gluten-Free, Dairy-Free

Gluten-Free Ranch Style Beans I’m not sure if it is just a Texas thing, but we love our Ranch style beans.   They are usually made with pinto beans, jalapeño, garlic, lots of spices, beef broth and tomato sauce.  They are savory with a little kick of heat and make a perfect side dish.   They especially make a great combo with restaurant style Tex-Mex rice (also very popular here in Texas).   And tasty beans and rice are a no-brainer for a Meatless Monday dinner.  So cheap and easy!  And tasty.   I also add them to my recipe for Bison Enchilada Soup.   We use them on Southwestern salads or in burrito bowls.  They are so good.   And they contain a lot...

Sweet Chili Sauce Roasted Brussels Sprouts | Gluten-Free, Dairy-Free

Hello, Sweet Chili Sauce Roasted Brussels Sprouts! I love Brussels sprouts.  We have a bunch of places here in Austin that serve killer Brussels sprouts.  Peached Tortilla, ATX Cocina, Uchiko and East Side King to name a few. And we have a few go-to super easy recipes on the blog. I really want to try and replicate the ATX Cocina fried Brussels with green chorizo and green mole one day.  So good. But one of my favorite super simple sides are the Crispy Parmesan Brussels.  And then there are the bacon Brussels tossed in simple vinaigrette. So y’all these sweet chili sauce Brussels are so easy to make – literally just a couple ingredients and you have this sticky, delicious, wonderful side dish.   Now it’s not...

salad with mango, black beans, wild rice, avocado, tomato, and more veggies

Mango, Black Beans and Wild Rice Salad | Gluten-Free, Goat’s Milk

Mango, Black Beans and Wild Rice Salad We eat a lot of salads.   There really is no better way to get all that dietary fiber to feed those gut bugs, good fat, vitamins, minerals and all things good for you in a satisfying meal.   And since mangos are in season right now – we must eat them!   Why not make a mango, black beans and wild rice salad? So I’ve been on a lentil and long grain and wild rice kick lately after realizing how good they actually are for us.  They really up the amount of dietary fiber we are taking in.   And I’ve seen a huge improvement in my digestion, too.  #feedthegutbugs Prep Ahead There are several things that...

Gluten-Free Pasta Primavera

Gluten Free Pasta Primavera We really try to make sure we eat meatless on Mondays and cut back on how much meat we eat in general.   I love the Meatless Monday campaign.  If you haven’t checked it out yet, you really should.   Better for us and the planet. So one of our reoccurring dishes is Giada’s Pasta Primavera but we cut the recipe in half because I’m only cooking for two.   We use gluten free Ancient Grains Quinoa Garden Pagodas instead of regular pasta.   I absolutely love this gluten-free pasta primavera. It is so easy to make and filling and delicious.  You get lots of dietary fiber from the roasted veggies, complete protein in the quinoa pasta, and decadence with the Parmesan...

Zinfandel Grape Sauce | Gluten-Free, Dairy-Free

Zinfandel Grape Sauce Once a year I love making a peach cobbler while peaches are in season. And of course we need a scoop of @nadamoo gluten-free and vegan Vanilla…AHHH ice cream. Last year I had two clusters of Zinfandel grapes on the vines and I made it into a Zinfandel grape sauce.  And poured that over the cobbler and ice cream.  It was insanely good.    This year our grapevine went crazy and we have so many clusters of grapes.  These that are ripening and tons of new growth on the ends. So I wanted to make the Zinfandel grape sauce again for the summer peach cobbler as well as freeze the grape juice from this first batch into cubes. Ideally, one day we’ll...

Salt Lick Potato Salad | Gluten-Free, Dairy-Free

This is a copy cat of the amazing potato salad at the Salt Lick BBQ. It is naturally gluten-free and dairy-free, too! Salt Lick Potato Salad The Salt Lick is a BBQ institution just outside Austin in Driftwood, Texas.   We’ve been going there since my college days at The University of Texas in Austin starting around 1990.   We take friends when they come to visit us and now that we live kinda close enough we’ll go there for dinner on a Wednesday.  And they are always busy. My usual at the Salt Lick is to indulge in pork ribs and brisket.  Everything is gluten-free except the bread and desserts.  Although sometimes I opt for the smoked turkey instead of the pork ribs.  But...

Grape Leaf Chimichurri | Gluten-Free, Dairy-Free

This was a fun experiment in the kitchen that turned out pretty well.  We used grape leaves and oregano from the backyard to make a grape leaf chimichurri sauce. Chimichurri Sauce Chimichurri sauce is a green spicy herb sauce that originated in Argentina.  It is typically made with parsley, oregano, garlic, olive oil, red wine vinegar, salt, pepper and red pepper flakes.   Two of our favorite restaurants in town, District Kitchen + Cocktails and Fresa’s Chicken, serve a beef dish covered with chimichurri.  And it is one of my absolute favorites!    Right now I have so much oregano growing on the patio garden that I just had to try to make it at home.   But I also have a crazy grape vine...
