gluten-free fried cheese sticks made with goat cheese mozzarella

Fried Goat Cheese Mozzarella Sticks | Gluten-Free

So really this is the most basic of recipes but we are using organic ingredients to “healthify” these gluten-free fried goat cheese mozzarella sticks. Wait, What? Yes, fried goat cheese mozzarella sticks! So after giving up gluten in 2010, I gave up dairy in 2014.  And my digestive system has been on the mend in a major way.   Then last year I reintroduced goat’s milk, goat cheese, and goat’s milk yogurt.   And it has been awesome!!!! We’ve been making all kinds of “healthified” comfort food favorites using goat’s milk lately like White Chicken Enchilada Casserole, Artichoke Spinach Dip, Fried Chicken Salad with Yogurt Ranch Dressing, and Smoky Goat Cheese Pimento Cheese. I’ve been dealing with dietary issues my whole life.  When I was a...

spiced potato wedges with vegan nacho cheese and spicy jalapeño slices

Spiced Potato Nachos | Gluten-Free, Dairy-Free

These organic, gluten-free spiced potato nachos are made from Russet potatoes, sprinkled generously with spices and covered in vegan cheese and spicy hot jalapeños. Gluten-Free Spiced Potato Nachos One of the things that has gotten me through all of my dietary restrictions is that I used to be able to eat a lot of things.  And now I just try to recreate those comfort food things within my restrictions while cleaning ’em up (organic, non-GMO) where I can. So this combo has become a huge hit around here.  It reminds me of the potato wedges at Fuddrucker’s.  They were nice thick wedges covered with a little spice.  Oh and then to drench them in the nacho cheese.  Add a few pickled jalapeños.  Ah, the delicious...

Easy Buffalo Chicken Dip | Gluten-free, Goat Cheese

Easy Gluten-Free Buffalo Chicken Dip There is nothing like starting off the new year with a Texas Longhorns win at the Sugar Bowl in NOLA!  Woo hoo!  I just love college football.  Hook ’em! And then there all the yummy game day eats.   And we love to indulge.  A favorite is definitely Buffalo chicken dip!    So I’ve decided I would start sharing some of my super simple and easy recipes this year even though they’ve been done before.  Mainly because I can eat goat cheese and Trader Joe’s makes a goat’s milk version of cream cheese which isn’t super tangy.   So we could bring back some favorites – this is definitely one of those.  Usually Buffalo chicken dip is made with: shredded...

Fried Artichoke Hearts | Gluten-Free, Dairy-Free

These gluten-free, dairy-free fried artichoke hearts are one of my absolute favorite treats! They are so good – everyone just gobbles them up. Gluten-Free Fried Artichoke Hearts Sometimes we have them as an appetizer or part of a meatless meal. They are so easy to make and a perfect way to use up leftover marinara or pizza sauce. Yum! Instead of using panko which is not gluten-free, we substitute an organic brown rice crisp cereal for the crispy exterior.   Two brands that I really love are:  One Degree Organic Foods  Field Day Products We usually grind the cereal with Italian seasoning in a mini-prep then to make a breadcrumb or panko substitute. I’ve included a simple recipe for making your own spice blend of...

“Healthified” Spinach Artichoke Dip | Gluten-free

So you guys — this spinach artichoke dip is amazing!  Dreamy, creamy and clean eatin’ ! It has been far too long since we’ve indulged in artichoke dip and this “healthified” version did not disappoint.  The first time I had artichoke dip was at a Holiday potluck party in graduate school in the late 1990’s.  And like I always react to delicious new foods – I started to obsess and ask who brought it, how did you make it, what is this amazing thing I’m eating.   The response was that I didn’t really want to know what was in it.  But I did.  I really did! And it was literally –> 2 cups of mayo, 2 cups of Kraft Parmesan powdery “cheese” and 2...

Twice-Baked Potatoes with Goat Cheese | Gluten-Free

Twice-Baked Potatoes with Goat Cheese I’m not re-inventing the wheel here by making twice-baked potatoes.   I just wanted to keep track of this particular combo of ingredients because they turned out really well. Instead of milk or sour cream, I wanted to use my new favorite ingredient – Trader Joe’s goat’s milk creamy cheese. We had some nitrate-free, hormone-free, antibiotic-free thick cut bacon in the freezer.  And green onions are always in the fridge.  So twice-baked potatoes were happening. I used medium-sized organic Yukon Gold potatoes.  I washed them then cut off the buds or “eyes” as well as any bad parts.   Then baked the potatoes on my grill pan at 450 F for about an hour without any oil or salt.  Cooking...

Smoky Goat Cheese Pimento Cheese | Gluten-Free

Smoky Goat Cheese Pimento Cheese Wait, what? I love pimento cheese!  And I haven’t been able to make it or eat it since 2014 when I finally acknowledged that I just couldn’t handle dairy anymore.   Before then, I used to make this killer recipe – Died and Went To Pimento Cheese Heaven! It’s not very good for you with all the cheese, cream cheese and mayo.  Served on white bread or crackers or fried into all types of amazing decadence.  All of those awful non-nutrient filled calories.   But you know what, I like to indulge once in awhile.  And I’m okay with that!   I don’t have a sweet tooth anymore, I just love decadent creamy cheesy goodness.  And I’m bringing it back...

Faux Queso | Gluten-Free, Dairy-Free

What is a faux queso? Sometimes when you love to eat and cook, something magical can happen in the kitchen. Impromptu and divine. While Brett and I were making King Ranch Chicken Casserole and waiting for it to bake, we snacked on the extra corn tortilla scraps and used them to wipe up some of the leftover sauce in the Dutch oven. And he said “this totally tastes like queso!”   And it actually did – from somewhere we’ve been before in the days when I could eat queso.  And I still can’t put my finger on it, but it did! His love of comfort food and ideas have propelled many of our efforts in the kitchen to recreate our favorite comfort foods while we...

gluten-free homemade cilantro lime hummus

Cilantro Jalapeño Hummus | Gluten-Free, Dairy-Free

Homemade Cilantro Jalapeño Hummus I love me some hummus! And I really like it flavorful and spicy. We’ve been buying a new flavor from the store – Cilantro Jalapeño Hummus – and because I usually devour it in two days it was starting to get a little expensive.   So it was time to try to make it at home.   I like to add white beans to the hummus to make it a little creamier plus white beans are high in calcium. And I’m always looking for ways to naturally increase my calcium intake since I can’t eat dairy.  So I’ve been testing a few different batches using a basic hummus recipe I’ve used before – but changing up the spices and some of the...

Homemade Red Salsa | Gluten-Free, Dairy-Free

Homemade Red Salsa Do you have a favorite recipe for red salsa? We’ve been playing around with different variations of homemade organic red salsa and I really like this one! It is easy and has a little kick to it. Since we are trying to keep it mostly organic we’ve used Muir Glen whole tomatoes, fresh organic peppers, onion, and garlic. Of course, you can add more peppers and different types to adjust the heat level, too.   We’ve also use fresh tomatoes as well and fire roast them with the other veggies. So the secret is roasting the veggies under the broiler to get a little char before blending them together.   I saw someone else make it that way, so I had to try...
