Fried Smashed Fingerling Potatoes | Gluten-Free, Dairy-Free

Fried Smashed Fingerling Potatoes So these fried smashed fingerling potatoes were a very happy accident. Super crispy fried potatoes with a soft center, sprinkled with smoked paprika and fresh cilantro then served with Sir Kensington’s Chipotle Mayo. It was so good! Like a cross between a potato chip and French fries. These would be great to serve at a BBQ with grilled meats or burgers. I was trying to recreate one of my favorite dishes from ATX Cocina – smashed papas bravas with smoked chili aioli. So I started out trying to make papas bravas using two different recipes from the New York Times and Serious Eats. But we simplified everything. And instead of buying Russet or Idaho potatoes, I thought I would try it...

Shishito Peppers and Spiked Chipotle Mayo

Shishito Peppers and Spiked Chipotle Mayo | Gluten-free, Dairy-Free

Sir Kensington’s Chipotle Mayo Before we get to the shishito peppers and spiked chipotle mayo recipe, I want to talk about how much I love Sir Kensington’s Chipotle Mayonnaise. They have several clean products made with gluten-free and nonGMO ingredients. As well as using fair trade organic cane sugar and certified humane free range egg yolks. So you get a pretty clean product that also sources mindfully to preserve biodiversity on the planet. I especially like the chipotle mayo. I’ve already used it in a couple of recipes found here on the blog. We love it in this chipotle curry chicken salad. Made with a few simple ingredients like apples, celery, pecans, cranberries and a little curry powder. It is such a quick and healthy...

Basmati rice with cilantro, garlic, lime and agave

Cilantro Lime Rice | Gluten-Free, Dairy-Free

This is a super simple and quick recipe for very tasty cilantro lime rice made from scratch using a few fresh ingredients.  It’s gluten-free, dairy-free and can be made vegan, too. Cilantro Lime Rice Yum!  So I originally posted this recipe for cilantro lime rice in 2015 but it’s getting a picture update and a little more love! We usually eat this as a side dish with spiced roasted chicken, marinated flank steak or in a carnitas burrito bowl.   Cilantro lime rice goes great with Ranch style beans or black beans for a Meatless Monday option. I just found some chorizo verde chicken sausage and definitely wanted to make up a batch of this rice to serve with it.  Maybe come up with some new...

mom's sweet carrot rice, gluten-free, dairy-free, vegan

Mom’s Sweet Carrot Rice | Gluten-Free, Dairy-Free

This is a decadent, super simple, but yet so wonderful recipe to pay tribute to my mom’s legacy recipe! People have and will rave about how good this sweet carrot rice is. And I cleaned it up, just a little, so you can feel better about your food choices! Sweet Carrot Rice This recipe for my mom’s sweet carrot rice was an absolute favorite growing up! It is decadent and delicious and an absolutely perfect side dish for a special occasion or holiday dinner. And it is so very easy to make with just four ingredients plus water and salt! So when she originally made the dish she cooked refined sugar in butter. Then added grated carrots and cooked them until they caramelized. Next adding...

homemade gluten-free stuffing with onions, celery and poultry seasoning

Just in Time for Thanksgiving! Good Gluten-Free Stuffing

I didn’t think it was possible, but the taste and fluffy texture of this gluten-free stuffing is just like the real thing using such a simple recipe and one little trick! It’s Time for Some Good Gluten Free Stuffing Update 2018: I really wanted to update this recipe to cover some of the changes we made over the years (croutons and proportions and now photos!).   The first time I made the stuffing it was for half the size but we’ve since doubled it because the leftovers are so good! In a nutshell, we developed this recipe using a hard crouton mixed with soft croutons.  Then coated in egg whites as a binder to make the perfect and fluffy gluten-free stuffing! So I had to...

Restaurant Style Tex-Mex Rice | Gluten-free, Dairy-free

Restaurant Style Tex-Mex Rice I love Tex-Mex (a fusion of American and Mexican cuisine).  It is hard to grow up in Texas and not love it.  And we have a lot of incredible Tex-Mex restaurants here in Austin that we frequent on the regular.   I mean what is not to love about enchiladas, tacos, chips and queso, guacamole, salsas, beans and rice.  And there are usually so many gluten-free options because of the corn tortillas.  Every place seems to have a slightly different version of beans on the side.  Sometimes refried beans and sometimes charro beans.  Then there is always the rice to go with it.   I’ve made a version of Mexican rice before with salsa and tomato sauce.  But I was super...

homemade gluten-free ranch style beans

Ranch Style Beans | Gluten-Free, Dairy-Free

Gluten-Free Ranch Style Beans I’m not sure if it is just a Texas thing, but we love our Ranch style beans.   They are usually made with pinto beans, jalapeño, garlic, lots of spices, beef broth and tomato sauce.  They are savory with a little kick of heat and make a perfect side dish.   They especially make a great combo with restaurant style Tex-Mex rice (also very popular here in Texas).   And tasty beans and rice are a no-brainer for a Meatless Monday dinner.  So cheap and easy!  And tasty.   I also add them to my recipe for Bison Enchilada Soup.   We use them on Southwestern salads or in burrito bowls.  They are so good.   And they contain a lot...

Sweet Chili Sauce Roasted Brussels Sprouts | Gluten-Free, Dairy-Free

Hello, Sweet Chili Sauce Roasted Brussels Sprouts! I love Brussels sprouts.  We have a bunch of places here in Austin that serve killer Brussels sprouts.  Peached Tortilla, ATX Cocina, Uchiko and East Side King to name a few. And we have a few go-to super easy recipes on the blog. I really want to try and replicate the ATX Cocina fried Brussels with green chorizo and green mole one day.  So good. But one of my favorite super simple sides are the Crispy Parmesan Brussels.  And then there are the bacon Brussels tossed in simple vinaigrette. So y’all these sweet chili sauce Brussels are so easy to make – literally just a couple ingredients and you have this sticky, delicious, wonderful side dish.   Now it’s not...

Salt Lick Potato Salad | Gluten-Free, Dairy-Free

This is a copy cat of the amazing potato salad at the Salt Lick BBQ. It is naturally gluten-free and dairy-free, too! Salt Lick Potato Salad The Salt Lick is a BBQ institution just outside Austin in Driftwood, Texas.   We’ve been going there since my college days at The University of Texas in Austin starting around 1990.   We take friends when they come to visit us and now that we live kinda close enough we’ll go there for dinner on a Wednesday.  And they are always busy. My usual at the Salt Lick is to indulge in pork ribs and brisket.  Everything is gluten-free except the bread and desserts.  Although sometimes I opt for the smoked turkey instead of the pork ribs.  But...

Crispy Parmesan Brussels Sprouts | Gluten-Free

Crispy Parmesan Brussels Sprouts These crispy Parmesan Brussels sprouts are one of the easiest and tastiest side dishes in our dinner rotation. It is basically a Parmesan crisp with a delectable little roasted vegetable attached. It adds a nice bit of salt and texture and yum to any meal. I love Brussels sprouts because they are so versatile. Oh man, I absolutely love them raw or tossed in bacon fat like these Bacon Brussels sprouts or roasted and tossed in Balsamic vinegar. I die for the charred Brussels at The Peached Tortilla. So good! But I love these crispy Parmesan Brussels because they are so easy to make and taste so amazing. It really is an awesome side dish. Thank goodness my body tolerates Parmesan...
