Basmati rice with cilantro, garlic, lime and agave

Cilantro Lime Rice | Gluten-Free, Dairy-Free

This is a super simple and quick recipe for very tasty cilantro lime rice made from scratch using a few fresh ingredients.  It’s gluten-free, dairy-free and can be made vegan, too. Cilantro Lime Rice Yum!  So I originally posted this recipe for cilantro lime rice in 2015 but it’s getting a picture update and a little more love! We usually eat this as a side dish with spiced roasted chicken, marinated flank steak or in a carnitas burrito bowl.   Cilantro lime rice goes great with Ranch style beans or black beans for a Meatless Monday option. I just found some chorizo verde chicken sausage and definitely wanted to make up a batch of this rice to serve with it.  Maybe come up with some new...

mom's sweet carrot rice, gluten-free, dairy-free, vegan

Mom’s Sweet Carrot Rice | Gluten-Free, Dairy-Free

This is a decadent, super simple, but yet so wonderful recipe to pay tribute to my mom’s legacy recipe! People have and will rave about how good this sweet carrot rice is. And I cleaned it up, just a little, so you can feel better about your food choices! Sweet Carrot Rice This recipe for my mom’s sweet carrot rice was an absolute favorite growing up! It is decadent and delicious and an absolutely perfect side dish for a special occasion or holiday dinner. And it is so very easy to make with just four ingredients plus water and salt! So when she originally made the dish she cooked refined sugar in butter. Then added grated carrots and cooked them until they caramelized. Next adding...

homemade gluten-free stuffing with onions, celery and poultry seasoning

Just in Time for Thanksgiving! Good Gluten-Free Stuffing

I didn’t think it was possible, but the taste and fluffy texture of this gluten-free stuffing is just like the real thing using such a simple recipe and one little trick! It’s Time for Some Good Gluten Free Stuffing Update 2018: I really wanted to update this recipe to cover some of the changes we made over the years (croutons and proportions and now photos!).   The first time I made the stuffing it was for half the size but we’ve since doubled it because the leftovers are so good! In a nutshell, we developed this recipe using a hard crouton mixed with soft croutons.  Then coated in egg whites as a binder to make the perfect and fluffy gluten-free stuffing! So I had to...

Restaurant Style Tex-Mex Rice | Gluten-free, Dairy-free

Restaurant Style Tex-Mex Rice I love Tex-Mex (a fusion of American and Mexican cuisine).  It is hard to grow up in Texas and not love it.  And we have a lot of incredible Tex-Mex restaurants here in Austin that we frequent on the regular.   I mean what is not to love about enchiladas, tacos, chips and queso, guacamole, salsas, beans and rice.  And there are usually so many gluten-free options because of the corn tortillas.  Every place seems to have a slightly different version of beans on the side.  Sometimes refried beans and sometimes charro beans.  Then there is always the rice to go with it.   I’ve made a version of Mexican rice before with salsa and tomato sauce.  But I was super...

homemade gluten-free ranch style beans

Ranch Style Beans | Gluten-Free, Dairy-Free

Gluten-Free Ranch Style Beans I’m not sure if it is just a Texas thing, but we love our Ranch style beans.   They are usually made with pinto beans, jalapeño, garlic, lots of spices, beef broth and tomato sauce.  They are savory with a little kick of heat and make a perfect side dish.   They especially make a great combo with restaurant style Tex-Mex rice (also very popular here in Texas).   And tasty beans and rice are a no-brainer for a Meatless Monday dinner.  So cheap and easy!  And tasty.   I also add them to my recipe for Bison Enchilada Soup.   We use them on Southwestern salads or in burrito bowls.  They are so good.   And they contain a lot...

roasted brussels sprouts tossed in garlic coconut aminos and sweet chili sauce with sesame seeds

Sweet Chili Sauce Roasted Brussels Sprouts | Gluten-Free, Dairy-Free

Hello, Sweet Chili Sauce Roasted Brussels Sprouts! Y’all these are so easy to make – literally just a couple ingredients and you have this sticky, delicious, wonderful side dish.  Now it’s not super healthy because of the sugar in the sweet chili sauce but it is gluten and dairy free and a delicious indulgence. I love Grama’s Sweet Chilli Sauce.  It is super tasty and made with a few simple ingredients, plus it is non-GMO, gluten-free and doesn’t contain preservatives.  It goes really well with those Feel Good Food gluten-free egg rolls.  Yum! And we love the Coconut Aminos Garlic Sauce from Coconut Secret.  Also, gluten-free, soy-free, diary-free, etc. Combine the two with a pinch of Thai red chili powder (for a little extra heat)...

Salt Lick Potato Salad | Gluten-Free, Dairy-Free

This is a copy cat of the amazing potato salad at the Salt Lick BBQ. It is naturally gluten-free and dairy-free, too! Salt Lick Potato Salad The Salt Lick is a BBQ institution just outside Austin in Driftwood, Texas.   We’ve been going there since my college days at The University of Texas in Austin starting around 1990.   We take friends when they come to visit us and now that we live kinda close enough we’ll go there for dinner on a Wednesday.  And they are always busy. There are so many great places for BBQ in this town, but the Salt Lick feels like home to me.  And let me tell you that the potato salad is one of my absolute favorite BBQ...

Crispy Parmesan Brussels Sprouts | Gluten-Free

Crispy Parmesan Brussels Sprouts These crispy Parmesan Brussels sprouts are one of the easiest and tastiest side dishes in our dinner rotation. It is basically a Parmesan crisp with a delectable little roasted vegetable attached. It adds a nice bit of salt and texture and yum to any meal. I love Brussels sprouts because they are so versatile. Oh man, I absolutely love them raw or tossed in bacon fat like these Bacon Brussels sprouts or roasted and tossed in Balsamic vinegar. I die for the charred Brussels at The Peached Tortilla. So good! But I love these crispy Parmesan Brussels because they are so easy to make and taste so amazing. It really is an awesome side dish. Thank goodness my body tolerates Parmesan...

Mesquite Smoked Asparagus | Gluten-Free, Dairy-Free

Mesquite Smoked Asparagus One of our favorite restaurants, District Kitchen + Cocktails, serves the most delicious seasonal and locally sourced food.  And so much of it can be made gluten-free.   Right now asparagus is plentiful and in season and of course on their menu.   I love asparagus because it is a detoxifier (glutathione), feeds the gut bacteria (inulin) and contains lots of vitamins and minerals.  But I LOVE the asparagus they serve at District.  They always knock it out of the park.   It is grilled and has this lovely woody smoky flavor.   So of course I had to try it at home.   Usually I just blanch asparagus or throw it in the oven with other roasting veggies near the end....

sweet and spicy cabbage made with ghee, hot sauce and maple syrup

Roasted Sweet & Spicy Cabbage | Gluten-Free, Dairy-Free

Roasted Sweet & Spicy Cabbage This roasted sweet & spicy cabbage has quickly turned into one of our favorite side dishes!  And it is so easy to make you don’t even need a recipe.  Basically, it is just organic cabbage tossed in ghee and your favorite hot sauce, roasted, then drizzled with maple syrup. We like to use a local brand of hot sauce called Yellowbird Jalapeño Sauce but there are so many gluten free spicy sauces you can try!   Franks RedHot, Sriracha, Cholula… Of course, if butter doesn’t bother you then you can substitute that for the ghee (which I use because it doesn’t contain casein).  I just pour melted ghee over the cabbage and then heavily drizzle with hot sauce.  Sprinkle with...
