Easy Meatless Monday Linguine | Gluten-Free

A quick and easy gluten-free pasta dish made in the time it takes to cook the pasta! Quick & Easy Linguine Perfect for Meatless Monday This has been one of our go-to Meatless Monday dishes.  And to be honest, it is a quick back up if I ever mess up something I’m cooking or a recipe turns out to be un-savable.   And it really only takes a few ingredients.  It’s a simple combo of Spaghetti Aglio e Olio and Cacio e Pepe.  Made with the best gluten-free pasta I’ve tried so far.   I really love the texture and taste of this Bionaturae gluten-free pasta!  It is made with organic rice flour, organic rice starch, organic potato starch, and organic soy flour.  The soy flour...

Eatin’ Clean in 2019 + A Seasonal Salad | Gluten-Free

Easy Gluten-Free Recipes Coming in 2019 This year I want to focus on some super simple gluten-free recipes.  And highlight some of my favorite products I’ve found over the last eight years that make eating gluten-free so much easier and tastier.   Like how to make a super simple but really tasty gluten-free pasta dish or goat cheese mozzarella sticks. And we are starting with this seasonal winter salad made with local products we love.   As you may know, after giving up dairy for several years I’ve introduced some goat cheese back into my diet again.  And I’m so excited!  There are so many different varieties of goat cheese now, too.  Soft, hard, semi-hard.  Funny Farm makes a fantastic pepper jack and mozzarella that...

Easy Buffalo Chicken Dip | Gluten-free, Goat Cheese

Easy Gluten-Free Buffalo Chicken Dip There is nothing like starting off the new year with a Texas Longhorns win at the Sugar Bowl in NOLA!  Woo hoo!  I just love college football.  Hook ’em! And then there all the yummy game day eats.   And we love to indulge.  A favorite is definitely Buffalo chicken dip!    So I’ve decided I would start sharing some of my super simple and easy recipes this year even though they’ve been done before.  Mainly because I can eat goat cheese and Trader Joe’s makes a goat’s milk version of cream cheese which isn’t super tangy.   So we could bring back some favorites – this is definitely one of those.  Usually Buffalo chicken dip is made with: shredded...

Puff Pastry Beignets | Gluten-Free, Lactose-Free

Gluten-Free Puff Pastry Beignets Yes, please!  They were good.  Really, really good.  And it only took three ingredients to make these amazing little gluten-free puff pastry beignets.   We recently discovered that Schär makes a gluten-free puff pastry dough.  And it is lactose-free too (no dairy ingredients as far as I can tell).  And I can’t even describe how excited I was. Right now the only place we could find it in Austin was at the Fresh Plus in Hyde Park and Central Market Westgate.   First, I used it to make chicken pot pie and it turned out okay.  I cooked the bottom layer covered in foil for about 15 minutes and then poked holes in the pastry where it had puffed up.  Filled it with the...

Just in Time for Thanksgiving! Good Gluten-Free Stuffing

I didn’t think it was possible, but the taste and fluffy texture of this gluten-free stuffing is just like the real thing using such a simple recipe and one little trick! It’s Time for Some Good Gluten Free Stuffing Update 2018: I really wanted to update this recipe to cover some of the changes we made over the years (croutons and proportions and now photos!).   The first time I made the stuffing it was for half the size but we’ve since doubled it because the leftovers are so good! In a nutshell, we developed this recipe using a hard crouton mixed with soft croutons.  Then coated in egg whites as a binder to make the perfect and fluffy gluten-free stuffing! So I had to...

Chicken Tortilla Soup | Gluten-free, Dairy-Free

This chicken tortilla soup is made with roasted peppers, lots of garlic, and seasoned salt for deeper flavors.  It is dairy-free and gluten-free.   Ahhhh, chicken tortilla soup. Where do I begin? To use one of my dad’s favorite words – I am somewhat of a chicken tortilla soup “connoisseur”. I have probably ordered it at every Mexican restaurant or hotel that I’ve been to since I first discovered it more than 20 years ago. I’ve also grown picky.  I don’t like it green or thickened or with a giant corn cob in it. My favorite chicken tortilla soup came from a little taqueria called El Rey on N. Shepherd & Washington in Houston.  And I’m trying to get it just like I remember. Many...

White Chicken Enchilada Casserole | Gluten-Free, Goat’s Milk

This clean eatin’ gluten-free white chicken enchilada casserole is made with non-GMO corn tortillas, goat’s milk pepper jack cheese, goat’s milk yogurt and Hatch green chiles!  Super simple and delicious. Gluten-Free White Chicken Enchilada Casserole I love white chicken enchiladas!  It would be kinda weird if you didn’t.  Just sayin’ … That combo of the cheese and chicken smothered in a rich sour cream and green chile sauce.  Definitely a comfort food favorite.   I miss it.  So since discovering all the ways goat’s milk has brought joy back into my life, I turned it into a casserole.  A casserole is easier because the corn tortillas we like don’t really bend that easily.  Plus I can make a large batch of this because it reheats...

Fried Artichoke Hearts | Gluten-Free, Dairy-Free

These gluten-free, dairy-free fried artichoke hearts are one of my absolute favorite treats! They are so good – everyone just gobbles them up. Gluten-Free Fried Artichoke Hearts Sometimes we have them as an appetizer or part of a meatless meal. They are so easy to make and a perfect way to use up leftover marinara or pizza sauce. Yum! Instead of using panko which is not gluten-free, we substitute an organic brown rice crisp cereal for the crispy exterior.   Two brands that I really love are:  One Degree Organic Foods  Field Day Products We usually grind the cereal with Italian seasoning in a mini-prep then to make a breadcrumb or panko substitute. I’ve included a simple recipe for making your own spice blend of...

Perfect Roasted Turkey à la Martha Stewart | Gluten-free, Dairy-free

I am super excited about cooking Thanksgiving dinner again! Because I’ve finally worked out the kinks to making some of our traditional favorites both gluten- and dairy-free. Perfect Roasted Turkey à la Martha Stewart I originally learned to cook a stuffed turkey in those Reynold’s turkey cooking bags, which always led to a lovely and dare I say it – moist – turkey.   But the last few years I’ve been using Martha Stewart’s roasting method and the turkey turns out insanely good.   You just can’t go wrong with a white wine and buttery baste.   We used Earth Balance butter spread or sticks (non-dairy, vegan, gluten-free, non-GMO) in place of real butter.   Oh and the house smells amazing. It’s pretty easy but you just need...

“Healthified” Spinach Artichoke Dip | Gluten-free

So you guys — this spinach artichoke dip is amazing!  Dreamy, creamy and clean eatin’ ! It has been far too long since we’ve indulged in artichoke dip and this “healthified” version did not disappoint.  The first time I had artichoke dip was at a Holiday potluck party in graduate school in the late 1990’s.  And like I always react to delicious new foods – I started to obsess and ask who brought it, how did you make it, what is this amazing thing I’m eating.   The response was that I didn’t really want to know what was in it.  But I did.  I really did! And it was literally –> 2 cups of mayo, 2 cups of Kraft Parmesan powdery “cheese” and 2...
