I was very excited to receive the Slice of Rice™ samples from Richard Cronk after connecting with him on Twitter @rhcronk.  We received a kit with the samples, several sheets of nori and a bamboo rolling mat. So this was our first time to make sushi at home and it was just so simple!   Each rice sheet has a specific side that sticks to the nori and is easily rolled with a bamboo rolling mat.   The rice tasted great with a hint of sweet organic rice vinegar. Pasta Carbonara One of our favorite dishes during the comfort food years before I had to nix gluten was pasta Carbonara.   It is so decadent and creamy and wonderful.   The recipe isn’t different but the problem was that most of the gluten free pasta available made it turn out pretty gross.   Then we found Pad Thai GF rice noodles!   And they worked  to make this pasta Carbonara awesome again.   Rice noodles are a perfect way to make a more traditional textured and decadent pasta Carbonara than I’ve been able to recreate with other types of GF pastas.   It’s so yummy!  And so easy, too. Then thought why not make little quiches like that as a finger food. So I made these while phasing out cheese before completely cutting dairy out of my diet. Healthified Sloppy Joes I used to love when my mom made Manwich Sloppy Joes from the can growing up! I haven’t had one in years… but after watching Rachel Ray make them on the Food Network the other day, I just had to try a homemade gluten-free healthified version. Banana Oat Muffins Today I’m sharing a recipe for gluten-free and dairy-free muffins.   I’ve been making different types of muffins and breakfast bars almost every Sunday for my husband’s breakfast during the week.   Some of his favorites are the chocolate zucchini muffins, sweet potato brownies, and cranberry oatmeal cookies (they make great bars, too). Bacon Brussels Sprouts This Brussels sprouts recipe has turned into one of our favorite side dishes.  It goes wonderfully with a Thai turkey burger and roasted sweet potatoes.  Or serve it with fried chicken tenders! It is a combo of two recipes I found on Pinterest from The Fit Cook and Heather Christo, which were both delicious. Cauliflower Crab Cakes What a fun recipe for cauliflower crab cakes.   Even though a few Pinterest recipes I’ve tried have been major fails (baked cheese sticks without the freezing directions, anyone? ;)) – others have been worth the effort.   A few weeks ago, we used a Pinterest recipe for Cheesy Cauliflower Pancakes. They were tasty, filling, and perfect for vegetarian night. Make them gluten-free by swapping out smashed up rice cereal for panko (and adding about one cup instead of a half cup).   I also prefer frying in coconut oil and butter.  Definitely will be making them again!
