Spiced Roasted Chicken | Gluten-Free, Dairy-Free

Spiced roasted chicken is such an easy, tasty dinner dish and it takes very minimal prep.   Doesn’t that look delish?   There are so many different ways to season chicken and I’m going to share a couple of my absolute favorite spice blends with you. Spices > Processed Foods The health benefits of spices are well-known and ancient (make sure they are gluten-free and preferably organic). And using them to flavor food is so much better than just covering the chicken with processed cheese or canned soup that has very little nutritional value. There is a cleaner way to make a yummy casserole, too.  If I want a creamy base for a casserole or dish, I’ll make a roux with GF flour, ghee and organic...

gluten-free recipe for blueberry muffins

Blueberry Muffins | Gluten-Free, Dairy-Free

All-Purpose GF Muffin Recipe I love the fresh berries, especially blueberries! And I don’t think there is anything better than a blueberry muffin filled with fresh ripe blueberries. There are many recipes out there for delicious blueberry muffins but my challenge is to not only make them gluten-free but casein-free as well.   And then I came across a perfect recipe for all types of gluten-free desserts!   I use a bean based gluten-free flour from Bob’s Red Mill, which is healthier than most all-purpose flours.  It has a little more calcium than other white flour blends and fiber.   Plus it doesn’t contain xanthan gum, which is disruptive to gut bacteria. This is a quick and easy recipe, too.  I didn’t even use the...

Mexican Rice | Gluten-Free, Dairy-Free

Easy Mexican Rice Maybe because I’m half Persian and always have Basmati rice in the pantry, but I just love rice dishes. All kinds of rice dishes from sweet to savory.   My mom used to make this decadent sweet carrot rice for special occasions now we make it more often since it’s a slightly cleaner version. And I just love this restaurant style Tex-Mex rice!  Oh and then there is Cajun bison dirty rice. Another one of our favorite side dishes is this recipe for naturally gluten-free, dairy-free Mexican rice.   You can make it so many different ways and depending on what you have on hand.   It starts with frying white Basmati rice in olive oil, but from there the recipe is really...

carnitas burrito bowls filled with rice, veggies, sweet corn and avocado verde sauce

Carnitas Burrito Bowls | Gluten-Free, Dairy-Free

Carnitas Burrito Bowls This delicious pork shoulder takes about 2.5 hours to cook in the oven but will last you for several days.  One protein with lots of options for different meals. Carnitas are great because you can use them in tacos or make these burrito bowls filled with all types of goodies.   Or even use the pork instead of chicken to make BBQ pork sandwiches or tacos with a vinegar marinated slaw.  I originally started out making the carnitas meat for tacos and never really thought to make burrito bowls until I got lucky with our weekly menu plan.   There was just enough leftover cilantro lime rice, black beans, avocado verde sauce and salsa.  So we added in a lot more vegetables...

BBQ Chicken Tacos & Slaw | Gluten-Free, Dairy-Free

Gotta Love Taco Tuesdays! Today’s recipe is a super simple recipe for BBQ Chicken Tacos!   We live in Austin, Texas so it shouldn’t be surprising that we eat a lot of tacos. Either out or at home. They are so easy to make and the combos are endless.    These super tasty BBQ chicken tacos with cabbage slaw combine a little sweet and spice and are naturally casein, dairy, and gluten-free. Also keep in mind that not all corn tortillas are gluten-free so make sure they don’t also contain wheat or flour.   And it’s better to find non-GMO corn tortillas if you can to avoid the Round-up (glyphosate) residues from corn. BBQ Sauce My husband likes to experiment with making BBQ sauce.  ...

Teriyaki Chicken Salad | Gluten-Free, Dairy-Free

Teriyaki Chicken Salad This teriyaki chicken salad is amazing! Well you know by now, I love a salad piled high with lots of different veggies, colors and textures (roasted, steamed, raw…). Add a little protein (usually my husband and I will split a chicken breast between the salads) and perfection! But this is fun because we take one of favorite flavor profiles – Teriyaki chicken kabobs – and make it into an awesome salad experience! Feeding the gut bugs while enjoying one of our favorite flavor profiles.  And keeping it clean – try to keep it as organic as possible! So I’m always experimenting with ways to use some of our favorite homemade gluten-free sauces like the Buffalo sauce or Teriyaki sauce in a salad.  Especially,...

Favorite Kale Salads & Dressings

Getting Creative with Kale & Balsamic Vinegar For Christmas this year, one of our gifts was a basket full of balsamic vinegars and infused olive oils (they were all gluten-free) from Con’ Olio Oils & Vinegar (made locally in the ATX). I was so excited because I just love salads! And we’ve had a great time experimenting with kale and pairing the various vinegars with the different types of fruit, nuts, seeds and veggie toppings. I’ve listed a few of the stand out kale salads below. Cranberry Pear We used a Cranberry Pear Balsamic Vinegar and EVOO to dress this salad made up of kale, oven roasted pears, toasted walnuts and pistachios, steamed Brussels sprouts and Persian cucumbers. I like to massage the kale and...

Vegan Banana Oat Muffins | Gluten-Free

Vegan Banana Oat Muffins I’ve been working on a basic breakfast muffin recipe that is quick and easy to make as well as healthy and nutritious without eggs because I know so many people have a sensitivity to eggs. This one for vegan banana oat muffins is my favorite so far. Some Celiacs are sensitive to oats as well so if you are newly diagnosed check with your doctor about adding oats to your diet. I like using oat and sorghum flour and walnuts and rolled oats for the nutrients and fiber.   But I’m pretty sure you can adjust the flours and nuts to your preference. It just takes a little practice and patience getting used to new flours when baking. What makes this...
