Turkey and Veggie Chili #glutenfree #caseinfree

Turkey and Veggie Chili This healthy, naturally gluten-free and casein-free turkey and veggie chili has evolved over the years and is now one of our absolute favorites! It is a much healthier alternative to traditional Texas chili because this version adds veggies.  Lots of veggies.  And the flavors are deepened by roasting the vegetables. The secret is not only in the roasted tomatoes, jalapeño, zucchini and bell pepper but also adding your favorite salsa to take it to the next level of spicy heaven.  Try using different chiles or peppers, too for even more variety and flavor options. This recipe makes enough for two large bowls of chili so if you want to serve more people double or triple the recipe. Happy cooking! Want More...

Veggie Paella #glutenfree #caseinfree

Veggie Paella I was inspired by Giada’s recipe and wanted to test my hand at this amazing veggie paella. We are always looking for interesting meatless meals to have at least once a week #MeatlessMonday. I’ve made this several times and altered some of the vegetables – not a fan of radishes but love cauliflower seasoned with bright spices. You could probably use any vegetables you like and it’s a great way to get rid of some of the veg in the fridge or freezer! I’ve made the artichokes in the recipe optional because they really change the flavor of the dish so if you aren’t a huge fan of artichokes then don’t bother with them. And of course, it could be vegan if you...

Chicken Fajitas #glutenfree #caseinfree

Chicken Fajitas & Seasoning  Fajita seasoning is one of my absolute favorite go-to spices to have on hand in the pantry.  I usually buy spices in bulk and then make up my own blends.  This is one we use all the time.  You can find the recipe below.   We not only use it to make chicken fajitas, but you can make just veggie fajitas by sprinkling it over veggies and then cooking them up.  I like to use bell peppers, jalapeños, onion, and zucchini.  And then squeeze with a little lime juice.  Perfect for Meatless Monday or Taco Tuesday. Or you can make beef fajitas, too.  Marinate the skirt steak with lime juice and a little gluten-free soy sauce or coconut aminos to tenderize...

Homemade Hamburger Buns #glutenfree #caseinfree

There is nothing better than fresh homemade bread out of the oven! I make my own hamburger buns and freeze them.  But before they all cool, we each have one with some high-quality EVOO, Italian seasoning and a little crushed red pepper.  It’s such a treat and motivation to make it myself. YUM! Homemade Hamburger Buns 2 cups tapioca starch 1 1/2 cups brown rice flour (or sorghum flour) 1/2 cup potato starch 4 tsp xanthan gum (or 2 tbsp guar gum) 2 tsp kosher salt 2 tsp aluminum-free baking powder 6 egg whites, at room temperature 1/4 cup olive oil 1/4 cup local honey 1 1/2 cups warm filtered water 5 tsp instant rapid rise yeast (2 packets) 1 tsp apple cider vinegar Tip:...

Chocolate Sweet Potato Brownies #glutenfree #caseinfree

These chocolate sweet potato brownies are delicious, nutritious and allergy friendly. I’ve made them eggless, gluten-free, casein-free, nut-free and soy-free. Make sure all of your ingredients (cocoa powder, spices, etc.) are gluten-free and not processed at a facility with WHEAT. The recipe is also very versatile. You could really use any type of gluten free flour in this recipe – almond, coconut, tapioca, certified GF oat flour, all purpose… I use the potato starch as an egg replacement. And if you aren’t allergic to nuts, add some walnuts to recipe as well.  It’s very easy to make this recipe for chocolate sweet potato brownies your own and adjust to your specific dietary restrictions. Enjoy the chewy gooey deliciousness! Want More Recipes Like These Chocolate Sweet Potato...

Spinach Salad with Warm Bacon Dressing | Gluten-Free, Dairy-Free

Spinach Salad with Warm Bacon Dressing Spinach salad is a great way to eat lots of fresh spinach!  And even better when tossed in this delicious warm bacon dressing from Alton Brown. Bacon makes everything better, right (uncured, nitrate-, nitrite-free bacon, of course)!  For this salad the bacon fat is reserved to make the vinaigrette.   There are a couple ways to cook the bacon. Spread the bacon out on a foil-lined baking sheet and place in the oven at 350 degrees F.  Or cook the bacon in a skillet on the stove top over medium heat. Either way, cook until browned then remove the bacon and drain on a paper towel. Then reserve the bacon fat for the vinaigrette. You could use turkey bacon instead...

Cauliflower Crab Cakes II #glutenfree #caseinfree

Cauliflower Crab Cakes II My original recipe and experiment for cauliflower crab cakes gets a lot of Pinterest traffic and is a pretty tasty treat so I thought I would share a tweaked version we made without the cheese and with a few more spices so you could enjoy the casein-free version of cauliflower crab cakes.

Cider-Brined Pork Tenderloin | Gluten-Free, Dairy-Free

Cider-Brined Pork Tenderloin I’m not gonna lie, this cider-brined pork tenderloin with roasted apples and carrots is ridiculously delicious!  It is truly the best pork tenderloin I’ve ever had.   And tossing the apples and carrots in lemon juice before roasting them makes for a tangy and sweet side that goes so nicely with the pork. We all know how well apples go with pork chops, but brining this tenderloin in apple cider takes it to another level.  And leftovers are amazing the next day. Yum!    Sometimes we find the long tenderloins and sometimes they are cut into smaller medallions.  Either cut works well.  I like to use a meat thermometer to make sure they are cooked to the right temperature.  I prefer my pork...

Orange Marmalade Oatmeal Cookies | Gluten-Free, Dairy-Free

These orange marmalade oatmeal cookies are naturally gluten-free, dairy-free (ghee and coconut oil) and egg-free.  They are highly addictive and super easy to make from scratch.   Gluten-free, Dairy-Free, Egg-Free Orange Marmalade Cookies  It’s not something we make often, but I wanted to make a gluten-free Chicken L’Orange recipe for The Weekly Menu II eCookbook.  As a special treat for Christmas dinner.   So I found gluten-free marmalade (Bonne Maman) and the recipe only required two tablespoons.   You know I hate to waste food.   So what was I going to do with the rest of it?   I thought why don’t I adapt my recipe for cranberry oatmeal cookies into some type of orange marmalade oatmeal cookies.   And on the first try...

Kale Pesto #glutenfree #caseinfree

Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.  It turned out wonderful.  Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! You could always add a little basil to it as well.  Or any types of greens really.  Get creative.  Want More Recipes Like Kale Pesto Pasta?
