Ghormeh Sabzi (Persian Herb Stew) & Basmati Rice | Gluten-Free, Dairy-Free

Ghormeh Sabzi is a traditional Persian Herb Stew made with various herbs and veggies, beans, stew beef, and dried sour limes. It is naturally gluten-free and dairy-free. For the Love of Persian Food My mother was Persian and growing up it was a huge treat when she would cook a traditional Iranian dish because she was pretty westernized and preferred not spending too much time in the kitchen.   Oh but when my grandmother would visit, we would feast the entire time – she loved to cook all day.  We had several favorites and it was amazing how much work she would do to make us happy.  The soups and stews and rice.  Oh my! One of my absolute favorite things to eat are stuffed...

homemade black bean soup made from scratch

Black Bean Soup | Gluten-Free, Dairy-Free

Black Bean Soup Some of the most simple ingredients can make a pretty tasty dish.   This is a flavorful and nutritious soup that is best when made from scratch (no canned beans or tomatoes) and it is naturally gluten-free, dairy-free and low-sodium. I never realized how much sodium was found in canned beans.  And it is hard to find organic canned beans.  So we decided to make our own black beans from scratch.   You do have to soak them overnight and then cook them for about an hour. For this recipe, we just make a small batch of black beans. But if you are putting in the effort, you could always increase the amount of beans and other ingredients.  Although it will take...

Singapore Street Noodles | Gluten-Free, Dairy-Free

Singapore Street Noodles This delicious recipe for Singapore street noodles is simple and easy to prepare.   This has quickly become one of our favorite go to dinners and ends up on the weekly menu often. It’s so tasty! The Asian flavors are big and bold.   We’ve been having fun making pasta dishes with these Pad Thai rice noodles.  Like pasta carbonara and kale pesto pasta. To make sure the recipe is gluten-free and dairy-free, use coconut aminos or gluten-free soy sauce. The red curry paste is gluten-free and does not contain preservatives. I found the original recipe from EZ Gluten-Free, which is a copy cat of PF Chang’s street noodles. I just changed out a few things. You start out with a few natural...

Gluten-Free Veggie Sushi Made with Slice of Rice™

I was very excited to receive the Slice of Rice™ samples from Richard Cronk after connecting with him on Twitter @rhcronk.  We received a kit with the samples, several sheets of nori and a bamboo rolling mat. So this was our first time to make sushi at home and it was just so simple!   Each rice sheet has a specific side that sticks to the nori and is easily rolled with a bamboo rolling mat.   The rice tasted great with a hint of sweet organic rice vinegar. We made two types of veggie rolls: one with carrots, cucumber, scallion, avocado, red and yellow bell pepper; and the other with mango, avocado and pickled jalapenos (not very traditional but yummy nevertheless).   It was so...

Pasta Carbonara | Gluten-Free

Pasta Carbonara One of our favorite dishes during the comfort food years before I had to nix gluten was pasta Carbonara.   It is so decadent and creamy and wonderful.   The recipe isn’t different but the problem was that most of the gluten free pasta available made it turn out pretty gross.   Then we found Pad Thai GF rice noodles!   And they worked  to make this pasta Carbonara awesome again.   Rice noodles are a perfect way to make a more traditional textured and decadent pasta Carbonara than I’ve been able to recreate with other types of GF pastas.   It’s so yummy!  And so easy, too. Sloppy Joes | Gluten-Free, Dairy-Free

Healthified Sloppy Joes I used to love when my mom made Manwich Sloppy Joes from the can growing up! I haven’t had one in years… but after watching Rachel Ray make them on the Food Network the other day, I just had to try a homemade gluten-free healthified version. To clean and lean up the recipe use: ground turkey, chicken or bison instead of ground beef tomato sauce and tomato paste from a jar (canned tomatoes can be problematic because BPA in the lining leaches into the acidic tomato sauces) gluten-free steak seasoning  organic red bell peppers, onions, and other ingredients when possible I cut the original Rachel Ray recipe in half because I’m only cooking for two.  And we ate them open-faced (well I...

cauliflower crab cakes

Cauliflower Crab Cakes | Gluten-Free

Cauliflower Crab Cakes What a fun recipe for cauliflower crab cakes.   Even though a few Pinterest recipes I’ve tried have been major fails (baked cheese sticks without the freezing directions, anyone? ;)) – others have been worth the effort.   A few weeks ago, we used a Pinterest recipe for Cheesy Cauliflower Pancakes. They were tasty, filling, and perfect for vegetarian night. Make them gluten-free by swapping out smashed up rice cereal for panko (and adding about one cup instead of a half cup).   I also prefer frying in coconut oil and butter.  Definitely will be making them again! Of course, my husband and I start brainstorming how they could be even better.  I rarely eat seafood, and I haven’t had a crab...

Cauliflower, Leek and Potato Soup | Gluten-Free, Dairy-Free

Cauliflower, Leek and Potato Soup I love soup!  And we eat soup often around here.  At least once a week, I’ll make up a big batch of soup and freeze some of it for lunches. I especially love chicken tortilla soup, red lentil and wild rice soup, and of course classic beef stew. But if I’m being honest, one of my favorite soups is Jean-Paul’s leek and potato soup from La Bonne Soupe.   I’ve never been to the bistro in New York, but I love the cookbook and make this soup often.   It is so rich and creamy and delicious! But in the spirit of eating healthier, I added cauliflower and adjusted the recipe to nix the cream, milk, and butter.   My...

gluten-free, dairy-free "beef" stroganoff

Gluten-free Dairy-free “Beef” Stroganoff

Gluten-free Dairy-free “Beef” Stroganoff One of my favorite dishes growing up was beef stroganoff.   I used to beg my mom to make if for dinner.  I think she used to make it with french onion soup mix and sour cream.  I’m not really sure. But I’ve tried to recreate a gluten-free dairy-free “beef” stroganoff making it a little healthier by using ground turkey instead of beef.   It is a very easy recipe and can all be combined and cooked in one pot.   I recreated the onion soup mix spices and use coconut milk or almond milk as a dairy free milk substitute.   Make sure all of your spices and ingredients are gluten-free, especially the cornstarch and beef bouillon.   I usually...
