Chicken Fajita Spices I love spices because they add so much flavor to a dish without any calories or fat.  Some of my favorites spice blends make a wonderful chicken dishes.  And work really well with potato wedges or nachos, too! Cider-Brined Pork Tenderloin | Gluten-Free, Dairy-Free

Cider-Brined Pork Tenderloin I’m not gonna lie, this cider-brined pork tenderloin with roasted apples and carrots is ridiculously delicious!  It is truly the best pork tenderloin I’ve ever had.   And tossing the apples and carrots in lemon juice before roasting them makes for a tangy and sweet side that goes so nicely with the pork. We all know how well apples go with pork chops, but brining this tenderloin in apple cider takes it to another level.  And leftovers are amazing the next day. Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! Black Bean Soup Some of the most simple ingredients can make a pretty tasty dish.   This is a flavorful and nutritious soup that is best when made from scratch (no canned beans or tomatoes) and it is naturally gluten-free, dairy-free and low-sodium. Singapore Street Noodles This delicious recipe for Singapore street noodles is simple and easy to prepare.   This has quickly become one of our favorite go to dinners and ends up on the weekly menu often. Gluten-Free Veggie Sushi Made with Slice of Rice™

I was very excited to receive the Slice of Rice™ samples from Richard Cronk after connecting with him on Twitter @rhcronk.  We received a kit with the samples, several sheets of nori and a bamboo rolling mat. So this was our first time to make sushi at home and it was just so simple!   Each rice sheet has a specific side that sticks to the nori and is easily rolled with a bamboo rolling mat.   The rice tasted great with a hint of sweet organic rice vinegar. Pasta Carbonara | Gluten-Free

Pasta Carbonara One of our favorite dishes during the comfort food years before I had to nix gluten was pasta Carbonara.   It is so decadent and creamy and wonderful.   The recipe isn’t different but the problem was that most of the gluten free pasta available made it turn out pretty gross.   Then we found Pad Thai GF rice noodles!   And they worked  to make this pasta Carbonara awesome again.   Rice noodles are a perfect way to make a more traditional textured and decadent pasta Carbonara than I’ve been able to recreate with other types of GF pastas.   It’s so yummy!  And so easy, too. Healthified Sloppy Joes I used to love when my mom made Manwich Sloppy Joes from the can growing up! I haven’t had one in years… but after watching Rachel Ray make them on the Food Network the other day, I just had to try a homemade gluten-free healthified version.
