carnitas burrito bowls filled with rice, veggies, sweet corn and avocado verde sauce

Carnitas Burrito Bowls | Gluten-Free, Dairy-Free

Carnitas Burrito Bowls This delicious pork shoulder takes about 2.5 hours to cook in the oven but will last you for several days.  One protein with lots of options for different meals. Carnitas are great because you can use them in tacos or make these burrito bowls filled with all types of goodies.   Or even use the pork instead of chicken to make BBQ pork sandwiches or tacos with a vinegar marinated slaw.  I originally started out making the carnitas meat for tacos and never really thought to make burrito bowls until I got lucky with our weekly menu plan.   There was just enough leftover cilantro lime rice, black beans, avocado verde sauce and salsa.  So we added in a lot more vegetables...

BBQ Chicken Tacos & Slaw | Gluten-Free, Dairy-Free

Gotta Love Taco Tuesdays! Today’s recipe is a super simple recipe for BBQ Chicken Tacos!   We live in Austin, Texas so it shouldn’t be surprising that we eat a lot of tacos. Either out or at home. They are so easy to make and the combos are endless.    These super tasty BBQ chicken tacos with cabbage slaw combine a little sweet and spice and are naturally casein, dairy, and gluten-free. Also keep in mind that not all corn tortillas are gluten-free so make sure they don’t also contain wheat or flour.   And it’s better to find non-GMO corn tortillas if you can to avoid the Round-up (glyphosate) residues from corn. BBQ Sauce My husband likes to experiment with making BBQ sauce.  ...

homemade gluten-free PF Chang style lettuce wraps

PF Chang Style Lettuce Wraps | Gluten-Free, Dairy-Free

PF Chang Style Lettuce Wraps There are a lot of recipes for PF Chang style lettuce wraps floating around the internet, but this one is gluten-free and casein-free.  Plus we make our own hoisin sauce. Most of the recipes I found require hoisin sauce, which is not going to be gluten-free. So I looked through a few homemade recipes for hoisin and came up with my own version using:  gluten-free, non-GMO coconut aminos whole sesame seed tahini (for the calcium and flavor) instead of peanut butter organic brown sugar (or local honey) organic rice vinegar and my favorite new ingredient, Thai red curry paste They were so quick and easy to make, too!   First we make up the hoisin sauce and set aside.  Most...

gluten-free homemade meat sauce with mini lasagna noodles

Easy Meat Sauce | Gluten-Free

Easy Meat Sauce This easy meat sauce recipe with mini lasagna noodles is one of our favorite easy and tasty dinners. Start with cooking down onions and garlic, which are a great boost to the immune system.  Then add the ground turkey, chicken or bison and tomato sauce. You could just brown up the meat and add a jar of marinara sauce. But I love to add fresh garlic and onions whenever I can to a recipe.  They are a great source of dietary fiber our gut bugs need to thrive. And then to deepen the flavors we add some red wine, Italian seasonings, crushed red pepper and fresh basil. Serving it with these gluten-free mini lasagna noodles make it seem like a deconstructed version of...

Turkey and Veggie Chili | Gluten-Free Dairy-Free

Turkey and Veggie Chili I found this healthy, naturally gluten-free and casein-free terrific turkey and veggie chili recipe years ago on Allrecipes.com. It is a staple in our dinner rotation and has really evolved over the years into this version of the recipe.   It is a much healthier alternative to traditional Texas chili because this version adds veggies.  Lots of veggies.   Lots of veggies = lots more dietary fiber and happy gut bugs.   Plus it is super tasty!  The flavors are really deepened by roasting the vegetables. The secret is not only in the roasted tomatoes, jalapeño, zucchini and bell pepper but also adding your favorite salsa to take it to the next level of spicy heaven.   Try using different chiles...

Veggie Paella | Gluten-Free, Dairy-Free

Veggie Paella We are always looking for interesting meatless meals to have at least once a week for Meatless Monday.  Some of our favorites are simply black beans and cilantro lime rice. Or a simple Caesar salad with homemade dressing.  Or lots of fried goodies like these fried artichoke hearts. But I wanted to try something a little more complex.  And I was inspired by Giada’s recipe for vegetable paella.   So why not test my hand at this amazing veggie paella while keeping it gluten and dairy-free. So I’ve made this veggie paella several times but altered some of the vegetables.  I’m not a fan of radishes but love cauliflower seasoned with bright spices. You could probably use any vegetables you like and it’s a...

Chicken Fajitas | Gluten-Free, Dairy-Free

Chicken Fajita Spices I love spices because they add so much flavor to a dish without any calories or fat.  Some of my favorites spice blends make a wonderful chicken dishes.  And work really well with potato wedges or nachos, too! Fajita seasoning is one of my absolute favorite go-to spices to have on hand in the pantry.  I usually buy spices in bulk and then make up my own blends.  You can find the recipe for homemade fajita seasoning below.   Another great option are season blends from Primal Palate. We not only use it to make chicken fajitas, but you can make just veggie fajitas by sprinkling it over veggies and then cooking them up.   I like to use bell peppers, jalapeños,...

Cider-Brined Pork Tenderloin | Gluten-Free, Dairy-Free

Cider-Brined Pork Tenderloin I’m not gonna lie, this cider-brined pork tenderloin with roasted apples and carrots is ridiculously delicious!  It is truly the best pork tenderloin I’ve ever had.   And tossing the apples and carrots in lemon juice before roasting them makes for a tangy and sweet side that goes so nicely with the pork. We all know how well apples go with pork chops, but brining this tenderloin in apple cider takes it to another level.  And leftovers are amazing the next day. Yum!    Sometimes we find the long tenderloins and sometimes they are cut into smaller medallions.  Either cut works well.  I like to use a meat thermometer to make sure they are cooked to the right temperature.  I prefer my pork...

Kale Pesto | Gluten-Free, Dairy-Free

Gluten-Free, Dairy-Free Kale Pesto Pesto is such an easy thing to whip up in the blender.  Usually it is made with fresh basil, pine nuts, Parmesan cheese, lemon and olive oil.   But I wanted to try it with everyone’s favorite superfood – kale. And we took out the Parmesan to make it casein/dairy-free.   It turned out wonderful.   Toss is with some gluten-free pasta and you have an easy, tasty, quick dinner!  Perfect for Meatless Monday! Or you can make it a pasta side dish with roasted spiced chicken or Italian turkey meatballs.  I’ve also used pesto on top of a cooked chicken breast and covered with bacon based on a dish I had years ago at Kerbey Lane.   There are so many...
