Red Lentil and Wild Rice Soup | Gluten-Free, Dairy-Free

Red Lentil and Wild Rice Soup I was so excited about how this red lentil and wild rice soup turned out!   You know we’ve been trying to eat more dietary fiber to improve gut health with prebiotics (foods that feed our gut microbiota).  Especially more lentils. And this soup is packed full of dietary fiber! #feedthegutbugs I just love soups and stews because you get the flavors of comfort food without the excess calories. I think this recipe for red lentil and wild rice soup is my new favorite. And it is hard to beat my love for one of my recent creations – Bison Enchilada Soup. Red Lentils Okay, so I’ve been reading about the different types and flavors of lentils. Red lentils...

Healthified Stuffed Peppers | Gluten-Free, Dairy-Free

Healthifying A Classic Comfort Food – Stuffed Peppers Today’s recipe is a healthier version of a classic comfort food staple – stuffed peppers.   Along with details of the things we change to clean it up.  Where the food comes from and what may be lurking along plays a role.   But first, let’s talk about the gut microbiome and lentils.  Because we are adding lentils to everything now! We add a lentils to our Healthified fried chicken salad or use them in a batch of home cooked black beans. As you know, I’m obsessed with the gut microbiome and how it is linked to the immune system.   Read more and dietary fiber, prebiotics and probiotics in my post here. I’m reading The Good Gut...

Thai Turkey Burgers | Gluten-Free, Dairy-Free

Thai Turkey Burgers These Thai turkey burgers are a staple on our weekly menus and after many years, we’re still not tired of them!   They are so good and easy to make and add a really a nice flavor profile to otherwise kinda boring white meat lean ground turkey (locally sourced and antibiotic-free).   It only takes a few ingredients and very little time to whip these burgers up with ground turkey, green onions, GF Thai red curry paste and GF coconut aminos.  Plus a little salt and pepper,  That’s it!  If you like a little more heat you could could add a pinch of cayenne pepper or dried Thai chili pepper. Ground turkey could be replaced with organic ground chicken.  We’ve started making...

Bison Dirty Rice | Gluten-Free, Dairy-Free

This is an easy recipe for one-pot, homemade, quick and easy, delicious bison dirty rice. Plus it is naturally gluten and dairy-free! Bison Dirty Rice I love Cajun dirty rice.   In the old days before I had to clean up my diet, I lived off of Zatarain’s New Orleans Style Dirty Rice Mix.  Loved it so much!   And although it is gluten-free, it contains folic acid – which I need to avoid because of my MTHFR variants.   So I decided I wanted to try to make some from scratch.  Usually homemade recipes use chicken livers to give it that “dirty” flavor.  But I’m not that brave. So I though why not try to make a bison dirty rice with Cajun seasonings.  ...

Bison Enchilada Soup | Gluten-Free, Dairy-Free

Love the flavor of enchilada sauce, but don’t want all the calories that come with eating enchiladas? This delicious, clean eating bison soup is gluten-free, dairy-free and mostly organic. Bison Enchilada Soup So the cold weather and my ridiculous allergies this time of year (cedar and mold) are really making me crave soup.   I’ve got homemade Ranchero Beans and organic tomato sauce in the freezer.  And Simply Organic enchilada sauce seasoning mix (gluten-free) in the pantry.   So why not make a bison enchilada soup!   That sounds really good, right? And, oh it was! I like to use bison because it is a much leaner meat that ground beef but still has the firmness that sometimes gets lost with ground turkey.  But you could substitute...

Baked Penne with Bison | Gluten-Free

Gluten-free Baked Penne with Bison So while everyone else is vowing to eat better this new year – I’m starting off the year making a bunch of pasta and goat cheese dishes. 🙂 Ever since we found bionaturae gluten free Italian pasta, I have been in pasta heaven.   The taste and texture really beats any of the other gluten free pastas I’ve tried so far.  It is made with organic rice, potato and soy.  And we love it! We use the pasta with goat cheese Alfredo sauce and one of our favorite original recipes for spicy chicken spaghetti. Of course you have to try the spaghetti with meatballs and red sauce, too. And we love the linguine with a little Parmesan, pepper, ghee and oil for...

Smoked Gouda Goat Cheese Broccoli Rice | Gluten-Free

Goat Cheese Broccoli Rice This version of broccoli cheese rice is made with two kinds of goat cheese, jasmine rice, and coconut milk.   It’s perfect for those of us trying to avoid casein found in cow’s milk.   Plus who doesn’t love goat cheese?   Or creamy cheesy broccoli rice dishes. Recently, at my favorite store the goat cheese section expanded.  We found a goat cheese smoked gouda (smoked gouda is one of my very favorites) from Holland and several different types of hard and soft cheese.  Machego. Chèvre… It made me so happy to be able to make this again.  And it was crazy good.  Especially the leftovers!  Remember leftovers should only be refrigerated for 3-4 days.   This makes up a big...

Bison Shepherd’s Pie | Gluten-Free

Bison Shepherd’s Pie You know I love meat and potatoes!   And Shepherd’s pie is one of our favorite comfort food dishes.   And although I like it with lamb, beef or ground turkey – I absolutely love it with bison!   Have you tried it with ground bison yet? We’ve been using bison in recipes a lot lately.  One of my favorites is Cajun dirty rice.  And it is wonderful in bison enchilada soup. And we use bison in the baked penne recipe. But I really love the combo of the veggies and bison with fluffy mashed potatoes on top. Over the years, I’ve made the mashed potatoes several different ways.   Usually boiled Russet, Yukon gold or red potatoes.  Originally, we add a little...

Summer Pasta Salad | Gluten-Free, Dairy-Free

Summer Pasta Salad This summer pasta salad reminds me of my mom and summer and neighborhood block parties growing up.   It was her go-to signature potluck dish, which probably came off the back of a bottle of Kraft Italian salad dressing.  Regardless, it was always a hit and so simple to make.   Just cooked pasta, avocado, sliced pepperoni and classic Italian dressing!  Tossed together and chilled before serving.  That’s it! My husband loves it.  There is just something about that combo that is really decadent and it’s kinda hard to stop eating it. Over the years, I’ve added various ingredients like roasted or steamed Brussels sprouts, roasted red bell pepper, sweet mini peppers, banana peppers, peperoncino, or fresh herbs from the garden.  There...

Goat Cheese Alfredo Sauce | Gluten-Free

Why make a Goat Cheese Alfredo Sauce? Besides the fact that it is just really, really good… For people with casein digestion issues, it may add a whole new option to your dinner menu if you can tolerate goat’s milk! The protein casein in goat’s milk is processed, and likely digested differently, than casein from cow’s milk. You can read a little more about that in this post.  So I was really excited to make this simple Alfredo sauce with ghee, certified GF oat flour (you could probably use any GF flour that doesn’t contain xanthan gum), coconut milk, goat cheese, honey, salt and a pinch of paprika.  And not react to it. Imagine all the ways you could use it. Here we made an old...
