Chipotle Curry Chicken Salad Just a few simple ingredients can make such a flavorful and easy dinner.   We’ve been making a version of this for years with mayo, curry powder and cayenne pepper added to Granny Smith apples, toasted pecans, celery, dried cranberries and cooked chicken. Gluten Free Pasta Primavera We really try to make sure we eat meatless on Mondays and cut back on how much meat we eat in general.   I love the Meatless Monday campaign.  If you haven’t checked it out yet, you really should.   Better for us and the planet. Grape Leaf Chimichurri | Gluten-Free, Dairy-Free

This was a fun experiment in the kitchen that turned out pretty well.  We used grape leaves and oregano from the backyard to make a grape leaf chimichurri sauce. Thai Turkey Burgers | Gluten-Free, Dairy-Free

Thai Turkey Burgers These Thai turkey burgers are a staple on our weekly menus and after many years, we’re still not tired of them!   They are so good and easy to make and add a really a nice flavor profile to otherwise kinda boring white meat lean ground turkey (locally sourced and antibiotic-free).   It only takes a few ingredients and very little time to whip these burgers up with ground turkey, green onions, GF Thai red curry paste and GF coconut aminos.  Plus a little salt and pepper,  That’s it!  If you like a little more heat you could could add a pinch of cayenne pepper or dried Thai chili pepper. This is an easy recipe for one-pot, homemade, quick and easy, delicious bison dirty rice. Plus it is naturally gluten and dairy-free! Love the flavor of enchilada sauce, but don’t want all the calories that come with eating enchiladas? This delicious, clean eating bison soup is gluten-free, dairy-free and mostly organic.
