Easy Meatless Monday Linguine | Gluten-Free

A quick and easy recipe for gluten-free Meatless Monday linguine made in the time it takes to cook the best gluten-free pasta from Bionaturae! Quick & Easy Linguine Perfect for Meatless Monday This has been one of our go-to Meatless Monday dishes.  And to be honest, it is a quick back up if I ever mess up something I’m cooking or a recipe turns out to be un-savable.   And it really only takes a few ingredients.  It’s a simple combo of Spaghetti Aglio e Olio and Cacio e Pepe.  Made with the best gluten-free pasta I’ve tried so far.   I really love the texture and taste of this Bionaturae gluten-free pasta!   It is made with organic rice flour, organic rice starch, organic potato...

Chicken Tortilla Soup | Gluten-free, Dairy-Free

This chicken tortilla soup is made with roasted peppers, lots of garlic, and seasoned salt for deeper flavors.  It is dairy-free and gluten-free. Ahhhh, chicken tortilla soup. Where do I begin? To use one of my dad’s favorite words – I am somewhat of a chicken tortilla soup “connoisseur”. I have probably ordered it at every Mexican restaurant or hotel that I’ve been to since I first discovered it more than 20 years ago. I’ve also grown picky.  I don’t like it green or thickened or with a giant corn cob in it. My favorite chicken tortilla soup came from a little taqueria called El Rey on N. Shepherd & Washington in Houston.  And I’m trying to get it just like I remember. Many years...

White Chicken Enchilada Casserole | Gluten-Free, Goat’s Milk

This clean eatin’ gluten-free white chicken enchilada casserole is made with non-GMO corn tortillas, goat’s milk pepper jack cheese, goat’s milk yogurt and Hatch green chiles!  Super simple and delicious. Gluten-Free White Chicken Enchilada Casserole I love white chicken enchiladas!  It would be kinda weird if you didn’t.  Just sayin’ … That combo of the cheese and chicken smothered in a rich sour cream and green chile sauce.  Definitely a comfort food favorite.   I miss it.  So since discovering all the ways goat’s milk has brought joy back into my life, I turned it into a casserole.  A casserole is easier because the corn tortillas we like don’t really bend that easily.  Plus I can make a large batch of this because it reheats...

Perfect Roasted Turkey à la Martha Stewart | Gluten-free, Dairy-free

I am super excited about cooking Thanksgiving dinner again! Because I’ve finally worked out the kinks to making some of our traditional favorites both gluten- and dairy-free. Perfect Roasted Turkey à la Martha Stewart I originally learned to cook a stuffed turkey in those Reynold’s turkey cooking bags, which always led to a lovely and dare I say it – moist – turkey.   But the last few years I’ve been using Martha Stewart’s perfect roasting method 101 and the turkey turns out insanely good.   You just can’t go wrong with a white wine and buttery baste.   We used Earth Balance butter spread or sticks (non-dairy, vegan, gluten-free, non-GMO) in place of real butter.   Oh and the house smells amazing. It’s pretty easy but you...

Chicken Stew with Mashies | Gluten-Free, Dairy-Free

Chicken Stew with Mashies Oh it is cold and rainy here in Austin, which has me craving all kinds of soups and stews.  I wanted to update this chicken stew recipe I’ve been making forever with new pictures and a minor adjustment to the recipe. Of course, we cook it with wine and broth and spices.  Lots of veggies, too.   Some of our other favorite soups and stews simmered in wine are classic pot roast and beef stew.  It just makes it so lovely.  I love chicken Andouille sausage gumbo, too.   Can’t get enough! So for this dish, we used to make it with boneless chicken breasts.  I’ve never really thought I liked chicken thighs until I recently had them in a stewed...

Classic Beef Stew | Gluten-Free, Dairy-Free

Meat and Potatoes! I love you. My favorite is probably this classic beef stew, or maybe pot roast, barbacoa short ribs, chicken stew with mashies, or steaks and frites… okay any type of braised beef. With potatoes. And spices. Love it all. And I will say this – I was a vegetarian for several years and we are trying to eat less meat in our diets in general because it is better for us and the environment.   But this homemade classic beef stew is a special treat.  Both because of the red meat and because it takes a really long time to cook.  And it’s just soooooo good! Now I warn you that the house will smell incredible.   And there is a lot...

Chipotle Curry Chicken Salad | Gluten-Free, Dairy-Free

Chipotle Curry Chicken Salad Just a few simple ingredients can make such a flavorful and easy dinner.   We’ve been making a version of this for years with mayo, curry powder and cayenne pepper added to Granny Smith apples, toasted pecans, celery, dried cranberries and cooked chicken. It’s spicy and sweet and Brett really loves it. Besides prep, the only thing that really takes time is cooking the chicken and then cooling it down.   You could always cook up a chicken dinner the night before and make an extra breast and store it in the fridge to easily whip this up the next night.   Or use a rotisserie chicken (make sure it is GF).   This recipe is great for leftover turkey breast,...

“Healthified” Taco Night | Gluten-Free, Dairy-Free

Gluten-free Taco Night! I really love using ground bison more than ground beef in recipes.  It’s leaner and doesn’t contain added hormones or antibiotics.  I talk a little more about red meat and our gut bacteria below. We’ve made shepherd’s pie with it, bison enchilada soup, and even Cajun dirty rice.   And love it on taco night! So even though tacos are a pretty simple thing to make – I wanted to share some of the gluten-free taco products I’ve come to love over the years, too.   And how we’ve “cleaned up” this Tex-Mex favorite. So here is basically what we need to make a taco gluten-free and a little bit healthier.   Trader Joe’s Gluten-Free Taco Shells So not all taco shells...

Gluten-Free Pasta Primavera

Gluten Free Pasta Primavera We really try to make sure we eat meatless on Mondays and cut back on how much meat we eat in general.   I love the Meatless Monday campaign.  If you haven’t checked it out yet, you really should.   Better for us and the planet. So one of our reoccurring dishes is Giada’s Pasta Primavera but we cut the recipe in half because I’m only cooking for two.   We use gluten free Ancient Grains Quinoa Garden Pagodas instead of regular pasta.   I absolutely love this gluten-free pasta primavera. It is so easy to make and filling and delicious.  You get lots of dietary fiber from the roasted veggies, complete protein in the quinoa pasta, and decadence with the Parmesan...

Grape Leaf Chimichurri | Gluten-Free, Dairy-Free

This was a fun experiment in the kitchen that turned out pretty well.  We used grape leaves and oregano from the backyard to make a grape leaf chimichurri sauce. Chimichurri Sauce Chimichurri sauce is a green spicy herb sauce that originated in Argentina.  It is typically made with parsley, oregano, garlic, olive oil, red wine vinegar, salt, pepper and red pepper flakes.   Two of our favorite restaurants in town, District Kitchen + Cocktails and Fresa’s Chicken, serve a beef dish covered with chimichurri.  And it is one of my absolute favorites!    Right now I have so much oregano growing on the patio garden that I just had to try to make it at home.   But I also have a crazy grape vine...
