Gluten-Free Spinach Goat Feta Puff Pastry

Thank you, Schär Having to eat gluten-free (and dairy-free for awhile) usually meant bypassing some of the most delicious treats. And sometimes you just really miss those old comfort food classics. Lately, we have been trying a bunch of Schär gluten-free products and are just blown away. We found hamburger buns and puff pastry dough at Central Market. Then we tried the pizza crust found at Sprouts and were so excited about the taste and texture. I’ve been so happy with the products so far (btw – this is not a sponsored post)! They also have the best table crackers and artisan multigrain bread (also at Sprouts). It’s awesome. Brett loves the entertainment crackers (taste so much like Ritz) and they are perfect for dipping...

Sorghum Millet Banana Muffins | Gluten-free, Dairy-Free

These gluten-free and vegan banana muffins are made with organic coconut sugar, smashed ripe bananas, avocado oil, applesauce, cinnamon, millet flour and sorghum flour. Homemade Muffins We love making homemade muffins around here because you can control all the ingredients that go into them. And banana muffins are definitely a favorite. Some of my early recipes were for banana oat muffins made with Better Batter all purpose gluten-free flour and certified gluten-free rolled oats. Then I made vegan banana oat muffins using a combo of gluten-free oat flour and sorghum flour to increase dietary fiber in the muffins. #feedthegutbugs In this recipe I’m using millet and sorghum flours instead and changing up the recipe just a bit. They really turned out delicious, nutritious with really...

Gluten-Free Chicken Breakfast Sausage

Biscuits, Breakfast Sausage & Gravy Who doesn’t love biscuits, sausage and gravy? We certainly love this comfort food around here! But how do we make it gluten-free and a little healthier? This one was not easy. Especially the biscuits. So I’ve tried to make gluten-free biscuits many times. When you use cold butter and buttermilk – they come out fantastic. But not so much when you use butter substitutes. So I really haven’t made great biscuits since giving up dairy. I was complaining about this to my friend, Suzanna, who makes beautiful biscuits and she suggested I use goat butter since I can tolerate goat’s milk. Genius! So I used Pamela’s Biscuit & Scone Mix, goat milk butter and coconut milk creamer and followed the...

Spiced Zucchini Muffins | Gluten-Free, Dairy-Free

These delicious gluten-free, dairy-free spiced zucchini muffins are made with coconut sugar, olive oil, spices, sweet white sorghum and millet flour. Summer = zucchini, zucchini, zucchini! I’m actually not a huge fan of it sautéed or grilled but always love baked zucchini goodies, like zucchini bread muffins.   See my delicious gluten-free recipe for chocolate zucchini muffins, too. Yum! There are so many recipes for zucchini bread out there, but I really wanted to try this zucchini spice bread from Martha Stewart because of all the spices in it. We love spice! And I prefer making muffins because it’s easier and quicker than making a loaf of bread. So to make this healthier, gluten-free, dairy-free and casein-free version, we change a few things: use a high-quality...

Hollandaise and Faux Béarnaise | Gluten-Free, Dairy-Free

Hollandaise and Faux Béarnaise So… here is the recipe for gluten-free, casein-free Hollandaise and faux Béarnaise sauce I promised you!   I love Hollandaise sauce but can’t eat the regular stuff anymore.   So we’ve adjusted it to be gluten-free and casein-free yet still rich, creamy and decadent. Instead of butter and cream we’ll be using coconut fat and ghee.  I’ve spent a lot of time over the years getting it just right. Yum! You really need a mini-prep for this because a blender is too big unless you double or triple the recipe.   Since we are cooking for two, we don’t make a lot of it.   But it does freeze really well.  So you could make a bigger batch, freeze it and...

Check out all the links below for some great fall ideas. So for our party I’m serving up these Sweet Potato Casserole Muffins. Yes it sounds weird, but they are so good!!! A fun little experiment that worked out better than I expected. I love sweet potatoes and really enjoy experimenting with them in the kitchen. And lately I’ve been getting pretty brave with my baking. I’ve been trying out some new ideas and developing non-traditional...

gluten-free recipe for blueberry muffins

Blueberry Muffins | Gluten-Free, Dairy-Free

All-Purpose GF Muffin Recipe I love the fresh berries, especially blueberries! And I don’t think there is anything better than a blueberry muffin filled with fresh ripe blueberries. There are many recipes out there for delicious blueberry muffins but my challenge is to not only make them gluten-free but casein-free as well.   And then I came across a perfect recipe for all types of gluten-free desserts!   I use a bean based gluten-free flour from Bob’s Red Mill, which is healthier than most all-purpose flours.  It has a little more calcium than other white flour blends and fiber.   Plus it doesn’t contain xanthan gum, which is disruptive to gut bacteria. This is a quick and easy recipe, too.  I didn’t even use the...

Vegan Banana Oat Muffins | Gluten-Free

Vegan Banana Oat Muffins I’ve been working on a basic breakfast muffin recipe that is quick and easy to make as well as healthy and nutritious without eggs because I know so many people have a sensitivity to eggs. This one for vegan banana oat muffins is my favorite so far. Some Celiacs are sensitive to oats as well so if you are newly diagnosed check with your doctor about adding oats to your diet. I like using oat and sorghum flour and walnuts and rolled oats for the nutrients and fiber.   But I’m pretty sure you can adjust the flours and nuts to your preference. It just takes a little practice and patience getting used to new flours when baking. What makes this...

no cheese mini quiche with hash brown crust

No Cheese Mini Quiches | Gluten-Free

These easy No Cheese Mini Quiches with a hash brown potato crust are gluten-free, casein-free (using ghee) and perfect for breakfast during the week, brunch, or taking on a picnic. No Cheese Mini Quiches Well these mini quiches are a tasty little treat and very versatile. I found a great recipe for quiche with a hash brown crust on the Food Network. Then thought why not make little quiches like that as a finger food. So I made these while phasing out cheese before completely cutting dairy out of my diet. We use coconut milk or coconut milk creamer instead of milk. Use ghee instead of butter to remove all the dairy ingredients.

ingredients for making carrot cake muffins

Carrot Cake Muffins | Gluten-Free, Dairy-Free

Gluten-Free Carrot Cake Muffins Who doesn’t love carrot cake?  And especially in the form of an easy-to-eat muffin! We love making homemade muffins from scratch.  They are much healthier than store bought muffins filled with preservatives, vegetable oil, and who knows what else. Some of our favorite muffins are filled with hidden veggies and a little more fiber filled flours, too.  Like Spiced Zucchini Muffins and the ever popular Chocolate Zucchini Muffins and Blueberry Muffins! And my weird little creation that turned out to be really yummy combo of sweet and savory – Sweet Potato Casserole Muffins. I found this recipe for carrot oatmeal muffins on allrecipes.com.  Then made a healthier gluten-free, casein-free version that tastes just as decadent. What we substituted to clean it up: a bean blend...
