Cream Cheese Ranch Cucumber Bites
Game Day Noms
These ranch cucumber bites were so easy to make with just five simple ingredients. Well easy except for me trying to figure out how to add the piping bag to the decorating tips and not succeeding. But the rest is so easy.
They are naturally gluten-free and made with goat milk cream cheese from Trader Joe’s, artisan goat milk yogurt, ranch spice mix, and fresh chives. Perfect little game day bites!
I love college football and love having around snacks we can nom on while watching the game.
Some of my favorites are pimento cheese and artichoke spinach dip. And finger foods like mini quiche Lorraine bites made with Schär gluten-free puff pastry.
We use the Trader Joe’s goat milk cream cheese in a lot of recipes on this blog.
Mixed with an egg and fresh chives, it made the most perfect filling for these vegetarian poppers topped with gluten-free Kettle Brand BBQ potato chips crumbles.
Or put it into twice-baked potatoes! Yum.
Now if you want to make it dairy-free, you could substitute the dairy-free cream cheese spread from Kite Hill (made with almond milk) and omit the goat milk yogurt from the recipe.
Gluten-Free Ranch Spice Mix
Another ingredient we always have on hand, and use a lot, is ranch spice mix. I make it up with bulk organic spices as follows:
- 2 tbsp dried parsley
- 1 tbsp dried dill
- 1 tbsp onion flakes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried chives
- 1 tsp freshly ground black pepper
Then just mix up the spices and store in a glass spice jar.
We love using this ranch mix and goat milk yogurt to make healthified ranch dressing for salads. Or just make up a yogurt ranch dip for cut up veggies like carrots, bell peppers and celery.
To make it just mix about one tablespoon per 3/4 cup of yogurt. Next add some salt and a generous amount of freshly ground black pepper and that is it.
You don’t have to feel guilty about eating ranch dip because it is yogurt with probiotics and good for you! Also, there are no hidden GMOs or glyphosate or gut disrupters either.
So I thought I would share this simple recipe for these ranch cucumber bites because they are so tasty, too. Plus a fun way to eat more veggies on game day.
Ranch Cucumber Bites
So we used organic Persian cucumbers from Trader Joe’s. They are crisper and have less seeds than English cucumbers and I personally think they taste better.
We take a tub of the Trader Joe’s goat milk cream cheese (4.5 oz) and empty into a bowl. Then add two tablespoons of goat milk yogurt to thin it out just a little bit.
Next we add two teaspoons of our ranch seasoning. Then we mix it all together so it is well blended. Taste it to see if it works for you. You could always add more of the spice blend, salt and pepper if you like but I didn’t think it was necessary.
Now I really tried to figure out how to add the bag to my piping tip thingies. Maybe I bought the wrong things. But I honestly couldn’t figure it out.
So I just scooped the filling into the decorating tip and pushed it through with a measuring spoon. And sprinkled a little fresh chives on top.
So my piping isn’t pretty and it took more than a minute. But they were so tasty. And they actually stored in the fridge for a couple of days, too. Seems like they would make great after school snacks as well.
I hope you enjoy these easy cucumber bites! Hook ‘em horns! ??
