Greek Salad with Homemade Dressing

For the Love of Salads!

I eat a lot of salads for lunch. Usually, I incorporate leftovers like the PF Chang lettuce wrap mixture into an Asian salad or left-over taco meat into a taco salad, but my absolute favorite is a Greek salad!

Versatility of a Greek Salad

So for the Greek salad, start with a little iceberg lettuce then add

  • organic Persian cucumbers
  • tomatoes
  • Kalamata olives
  • shallots
  • sometimes sweet peppers
  • dolmas
  • any extra veggies depending on what I have in the fridge
  • sometimes a little gluten-free and casein-free deli turkey, salami or pepperoni

Then drizzle with the homemade Greek dressing.  Yummy and so healthy!   You can’t get any more Mediterranean than this.

We really like to make our own vinaigrettes and salad dressings to avoid preservatives, high fructose corn syrup and other weird ingredients found in store-bought dressings.

A recent study published in Nature (one of the most reputable peer-reviewed science publications) links emulsifiers and gums like xanthan gum to disruption of normal bacterial behavior in our gut.  There is a good summary of the research in this Civil Eats article. It’s just one more reason to take a little extra time to make it from scratch.

This Greek dressing is one of my favorite homemade salad dressings and I highly recommend trying it!  I make up a batch and keep it in a 12-ounce reusable glass salad dressing bottle I bought at our local H-E-B grocery store.  It’s so good!  We love to put it on lettuce garnishing our sandwiches, too.

The gluten-free dolmas I really like are from My Greek Meze.  Do you like to heavily black pepper your dolmas, too?  It is a must for me!  Hope you enjoy your delicious and nutritious salad!

Ingredients

  • 1/2 cup extra virgin olive oil
  • 2/3 cup red wine vinegar
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp dried basil
  • 1 tsp onion powder
  • 1/3 tsp dry ground mustard
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

Instructions

  1. Mix the ingredients together and store in an airtight container like a salad dressing bottle or glass jar. Shake well before drizzling over the salad.

  2. Can be kept at room temperature on the countertop.

    Greek salad is my all time favourite. I’m going to try this dressing tomorrow. How long would you say the dressing lasts?

    • Oh Good! I hope you like it! We usually go through about a bottle per week. I tend to err on the side of caution and usually store everything in the fridge but wanted a dressing that didn’t need to be refrigerated and making it with all dry ingredients has been perfect.
