Well I am definitely still hurting from the bachelorette party this weekend.  Talk about over indulgence on my part (there may have been a failed attempt to dance on the stripper pole at the end of the night, too – smh).  

But it was a great time with great people and I’m so happy we could celebrate the love between Kevin and Anthony on such a lovely day.

The wedding is only a few weeks aways and should be fabulous!  They said there will be a few gluten free options for me at the dinner and I’m so very grateful for that!

So I haven’t cooked since Thursday.  It’s been mostly take out.  

We added a new favorite to the rotation, too.  We tried Fresa’s last week and then again tonight (take out) and I’m super impressed with the wood-grilled chicken.  

And the wood-grilled cauliflower tossed in sherry vinaigrette side dish.  Loving the convenience of this place.  It is super cute with a lovely outdoor dining area.  And the to go window is really easy.  

I love following some of the Austin foodies on IG while they discover all the hot places around town.  Every now and then I can eat at one!  

And this place has lots of gluten-free options and is perfect for picking up a quick dinner after our grocery shopping trip.

It has been suggested we try ATX Cocina, too.  The food sounds amazing and is all gluten free.  And they use non-GMO maize, beans and chilies.  We’ll be trying that out soon!

Anyway, we have a bajillion jalapeño peppers on our pepper plant so I’m trying to use some of those up this week.  We decided on chicken tortilla soup and bacon wrapped poppers with goat cheese.  Yum.  Yum.

Thursday – Bacon Wrapped Jalapeño Poppers Stuffed with Goat Cheese

Friday – Dinner Out

Saturday – Goat Cheese Alfredo Pasta with Roasted Chicken and Broccoli

Sunday – Asian Turkey Burgers & Sweet Potato Fries

I had to start eating gluten-free in 2010, then cut dairy and casein (except for the occasional Parmesan) in 2014. We learned A2 casein (goat, sheep and buffalo milk) is easier to digest than the predominate A1 form in cow milk. So we brought back goat milk dairy into our recipes in 2016. Thank goodness, right! So I'm kind of a science nerd, too. In the '90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook 'em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course. Currently, I'm learning about the microbiome and gut health. And trying to come up with healthy recipes to feed those gut bugs! #feedthegutbugs
