The Weekly Menu July 11

Hi everyone!

Time for the gluten-free, low FODMAP weekly menu July 11!

So my digestive system is actually doing a little better on the low FODMAP diet (still also gluten, totally dairy and casein free except for the Parmesan).  I’ve learned a lot more about food this week, too:

  • basically all my spice blends have garlic or onion powder in them – so I need to revamp all the homemade blends I use
  • ketchup, hot sauce, curry paste and lots of condiments have garlic or onion powder in them
  • garlic infused olive is oil is awesome
  • a lot of high FODMAP food are veggies, fruit, nuts, beans, honey… the stuff  we love to eat

But we are going to continue this diet for awhile until I feel better.  It’s a process but these weekly menus help make my life so much easier.

The Weekly Menu July 11

MondayBreakfast Tacos for Dinner (eggs, roasted potatoes without spice blend, homemade chicken breakfast sausage, low FODMAP hot sauce, El Milagro corn tortillas)

Tuesday – GF Gnocchi & Italian Seasoned Ground Chicken in Lemon Pan Sauce (garlic infused olive oil, ghee, lemon juice)

WednesdayRice, Beef & Green Bean Dish (Loobia Polo in Persian) from The Persian Pot (without the onion)

ThursdayChicken & Rice Turmeric Soup

FridayChicken & Eggplant Parmesan (using homemade sauce with no onions or garlic)

Saturday – Buffalo Turkey Meatballs (using ghee, GF oats, celery, Texas Pete’s hot sauce, egg); Green Beans

Sunday – Greek Salad (no shallots, make the homemade dressing without the onion powder and using garlic infused olive oil instead of garlic powder)

You get one life - do your best to ENJOY IT! So hi, I'm Deana. This food blog is all about cooking wholesome real food and developing gluten-free recipes for some of our favorite comfort foods. I had to start eating gluten-free in 2010, then cut dairy and casein (except for the occasional Parmesan) in 2014. We learned A2 casein (goat, sheep and buffalo milk) is easier to digest than the predominate A1 form in cow milk. So we brought back goat milk dairy into our recipes in 2016. Thank goodness, right! So I'm kind of a science nerd, too. In the '90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook 'em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course. Currently, I'm learning about the microbiome and gut health. And trying to come up with healthy recipes to feed those gut bugs! #feedthegutbugs
