Kale Pesto Pasta #glutenfree #caseinfree

I wanted to make an easy, healthy, gluten-free, casein-free dinner with everyone’s favorite superfood – kale – and my favorite pad thai rice noodles.  This kale pesto pasta (minus the parmesan cheese) turned out really yummy and we’ll definitely be making it again. I love the textures as much as the taste! Ghormeh Sabzi (Persian Herb Stew) & Basmati Rice #glutenfree #caseinfree

Ghormeh Sabzi – A Persian Herb Stew My mother was Persian and growing up it was a huge treat when she would cook a traditional Iranian dish because she was pretty westernized and preferred not spending too much time in the kitchen.  Oh but when my grandmother would visit, we would feast the entire time – she loved to cook all day.  We had several favorites and it was amazing how much work she would...

Southwestern Taquitos #glutenfree #caseinfree

We’ve adapted the original recipe for southwestern egg rolls (like we used to get at Chili’s) to make it easier and cheese-less (so no more casein). It’s a very similar filling (minus the cheese) as the original and we used corn tortillas brushed with olive oil and baked in the oven at 400 degrees F for 15-20 minutes. The Southwestern Taquitos were awesome and so much easier than making gluten-free flour tortillas from scratch!

Black Bean Soup #glutenfree #caseinfree

This is a flavorful and nutritious soup that is best when made from scratch (no canned beans or tomatoes) and it is naturally gluten-free, dairy-free and low-sodium. Use vegetable broth to make it vegetarian and omit the Worcestershire sauce (made with anchovies) to make it vegan. It actually may be more of a meatless black bean chili than a soup. Regardless, it goes really well with added rice (plain basmati, cilantro lime rice or Mexican...

Singapore Street Noodles #glutenfree #caseinfree

This delicious recipe for Singapore street noodles is simple and easy to prepare.  The Asian flavors are big and bold, and of course, it is naturally gluten-free and dairy-free (make sure the coconut aminos or soy sauce and red curry paste are gluten-free). This has quickly become one of our favorite go to dinners and ends up on the weekly menu often. It’s so tasty! You start out with a few natural organic ingredients like...

Basil Artichoke Sauce with Roasted Chicken and Penne Pasta #glutenfree

I found this recipe for basil artichoke sauce when looking for a way to use up some of the fresh basil in the garden. I use frozen artichoke hearts (or canned if I can’t find frozen) because it’s just so much easier than prepping fresh artichokes. Although, I’m sure it tastes better with fresh artichokes simmered in ghee and wine. Basil Artichoke Sauce with Roasted Chicken and Penne Pasta  1 large bone-in split chicken breast...

Chocolate Chip Breakfast Muffins #glutenfree

I’m always trying to improve recipes to make them even healthier and more allergen friendly (egg free, dairy free, gluten free, soy free) without losing taste and texture. This was a recipe for orange-pinapple chocolate chip muffins, but I’ve taken out the white flour, xanthan gum and egg. I was truly surprised how well they turned out!  It’s a keeper! Chocolate Chip Breakfast Muffins 3 cups GF oat flour (or use a GF blend) 1...

Fancy Green Beans #glutenfree #caseinfree

YUM! These fancy green beans are a super easy side dish with lots of flavor and texture that are naturally gluten-free and casein-free (make sure you use GF mustard and the walnuts aren’t processed at a facility with WHEAT). 1/2 lb green beans, trimmed 2 tbsp walnuts, chopped 2 shallots, sliced 4 tsp olive oil, divided 1 tsp red wine vinegar 1 tsp GF stone ground mustard Kosher salt Freshly ground black pepper Mix together...

Happy 4th of July everyone! Hope you are having a fun day with family and friends. We are spending it with friends tonight at the Circuit of the Americas to watch the fireworks. The Gluten-Free Weekly Menu June 27

Happy Friday Y’all!  This week I started working on the iBook version of The Weekly Menu cookbook and couldn’t be more excited about the new format!  The iBook cookbook template is awesome and has really turned the old pics into food porn and has inspired new photos, an updated cover, refined intro (again) and some minor modifications for formatting.  I should have it ready soon. And one of the greatest things about these recipes is...
