Time for the weekly menu!

Hi everyone.  Well we got out the Christmas decorations and even had a snow day!  That is pretty unusual here in Texas but it was certainly fun to see snow cover everything.  This week we’ll be going to see the King and I as well as visiting with family for Christmas gift exchanges and dinner.  So I won’t be cooking a lot.  And the menu isn’t all that exciting this week.  We usually make “beef” stroganoff with ground turkey but I’m going to try my recipe with ground bison instead just to change things up.  It is a dairy-free recipe using beef broth, spices, coconut milk and gluten free pasta.  This will be my first time to try it with the bionaturae pasta.

I have a bunch of cabbage left over from last week, so we are going with cabbage, sausage and baked beans.  We have stopped buying canned foods completely.  So I was super excited about trying the new baked beans from Pacific Foods – but after checking the product allergy page, I realized they are not gluten free because of cross-contamination.  So I’ll figure out a way to make some in the crock pot.  From scratch is always better anyway.  Do you have any favorite vegetarian baked bean recipes?  I saw a tip to add liquid smoke and I’ve pinned a bunch of recipes.  I also want to make Ranchero beans.

And then we have leftover lasagna soup from in the freezer.  Have you frozen soup with gluten free pasta?  From my experience, when I freeze soup with gluten free pasta in it the texture of the pasta becomes grainy or it disintegrates.  I haven’t tried it with the bionaturae pasta but I’ve gotten in the habit of cooking the pasta separately then adding it to individual soup bowls.  That way I can freeze the soup stock and add pasta to it when it is reheated.

Okay, now next week will be full of cooking some of our favorites, including the gumbo!
