The Weekly Menu July 10-16 #glutenfree #menuplanning

Hi everyone!  Hope you had a great holiday last week.  We got to eat well the first half of the week and I was super excited about how the pulled pork turned out.  We ended up using Franklin’s BBQ sauce instead of making our own and it was so awesome!  Pulled pork is incredibly easy to make in the oven with a nice marbled pork butt.

So the second half of the week – I had to go to the dentist.  And have a tooth pulled so I’ve been on soft foods.  I’m not sure what cracked my tooth but I think it might have started last year.  There was bone in some Jennie-O sausage (yes, it was super gross) that cracked a filling in the tooth next to it.  So I had to have the filling replaced last year.  Then the back molar started giving me problems recently and went from kinda painful to unbearable.  Maybe that bone started a minor crack that got worse.  Or perhaps it was something else I ate or did.  But that crack went down my back right molar all the way to the root.  So painful!

Anyway, I really love my dentist.  He took it out Friday morning, put in a bone graft and I’m recovering well.  Eating mush for now.  I’m also taking really strong antibiotics.  So I take an antibiotic and then drink kombucha about an hour later.  Trying to replenish my gut microbiome after the antibiotic wipes it out.

Luckily last week, we also started to ferment gluten-free sourdough starter from Cultures for Health.  We are using gluten free organic brown rice to feed it about every 6 hours.  I’m pretty excited to start baking with it, too.  The wild yeast and bacteria in sourdough bread are supposed to be wonderful for improving the culture of the gut microbiome.  So yay!

We are going to have dinner with my college roommate and her husband this week, which is always a huge treat.  They live in San Antonio so we are going to meet in the middle and try out a new local cafe in San Marcos with a pretty diverse gluten free menu.  And Sunday is the Game of Thrones Season 7 premiere so it will be all about easy take out and TV!

You know, I’m really grateful the bad tooth incident happened last week and the dentist was so awesome and that I can enjoy the fun stuff we have planned out the rest of the month.  Gratitude for the littlest of things goes a long way…
