Happy Memorial Day weekend everyone! I’m working on a new recipe I’m pretty excited about and should have it ready on Tuesday. You know how much I miss queso and cheesy goodness, well I may have an actual substitute for us folks that can’t eat dairy! A faux queso.
So here is the weekly menu for next week…

It’s mostly non-GMO or organic, and totally “free from” gluten, dairy/casein (except goat cheese or Parmesan), xanthan gum, soy and more…
Monday – Burgers & Spiced Roasted Potatoes
Tuesday – Chicken Tostadas with Faux Queso (recipe coming soon)
Wednesday – Freedmen’s BBQ and Something Rotten
Thursday – Teriyaki Chicken Salad (using Coconut Aminos Teriyaki Sauce)
Saturday – Eggplant Chicken Parmesan (using GF oat flour as the breading)
Sunday – Dinner Out
