Happy Mother’s Day to all you wonderful moms and daughters! It’s hard to believe my mom passed 24 years ago and I’ve lived more than half of my life without her. I still miss her but it is especially weird that I am nearing the age that she died.
But I’m lucky to have had her for as long as I did and I certainly wouldn’t be the person I am today without her unconditional love and joyful, kind spirit. And her wonderful sense of humor.
So it’s menu time again and here we go!

It’s mostly non-GMO or organic, and totally “free from” gluten, dairy/casein (except for goat cheese), xanthan gum, soy and more…
Meatless Monday – Veggie Tacos & Refried Beans
Wednesday – Culinary Dropout & checking out the Domain Northside
Thursday – Honey Garlic Chicken, Veggie & Rice Bowls
Friday – Salad Niçoise
Saturday – “Beef” Stroganoff (using quinoa pasta and adding Trader Joe’s creamy goat cheese, which is similar to cream cheese for added creaminess to this dish)
Sunday – Chipotle Chicken Taquitos (New from Feel Good Foods), Salsa and Guacamole
