Hi everyone! Hope you are having a great week. Things have been really nice the last few weeks catching up with great friends and eating out at restaurants around town. Recently we’ve been to Grizzelda’s, Alcomar, Manuel’s and Lambert’s Downtown BBQ.
It has become so easy to eat gluten free around here! Honestly, most places just point out the few things you can’t have and whether the fryer is dedicated or cross contaminated. Lots of places make homemade corn tortillas, too. Yum!
And it was lovely sipping sangria on the patio at the W on Saturday afternoon. I really LOVE their red sangria! It’s going to be the summer of sangria again. So refreshing.
I’m really having fun taking my time playing around in the kitchen and cooking again, too. It’s been really nice. We even roasted a chicken to make the gumbo last week and it was amazing!
So I finished school with all As and a ton of knowledge and I’m looking forward to the next chapter…

The Gluten Free Weekly Menu
Meatless Monday – Tortilla Espanola (potatoes, onions and eggs)
Tuesday – Cider-Brined Pork Tenderloin, Roasted Apples & Carrots, Asparagus
Wednesday – Salad with Leftover Pork Tenderloin & Balsamic Vinaigrette
Thursday – Ground Turkey Enchiladas & Mexican Rice (using Simply Organic enchilada sauce seasoning and maybe a vegan cheese)
Friday – Perfect Pot Roast & Mashies
Saturday – Bison Burgers & Homemade Sweet Potato Fries (using Simple Mills almond flour bread mix to make the hamburger buns)
Sunday – Dinner Out
