Hi everyone! Time for the weekly menu again. Things are getting really busy with school and I’m going to need these menus to get me through! I’ve set up menus for the next three weeks that have really easy recipes. Basically a bunch of stuff that Brett likes to cook or that we can quickly put together. Like the meatballs – love to cook up a big batch and then freeze them for dinner next week. Some of the dinners make great leftover lunches, too. Good stuff!
Of course, the weekly menu is gluten free and dairy/casein free (except for the occasional parmesan or goat cheese) and mostly organic and non-GMO!
The Gluten Free Weekly Menu
Meatless Monday – Fried Artichokes, Marinara Sauce, Beet Hummus, Veggies
Tuesday ❤️ – Roasted Chicken (or Steaks) & Roasted Veggies
Wednesday – Italian Turkey Meatballs (substitute 1 cup certified gluten free ground oats for bread crumbs), Marinara Sauce, Quinoa Linguini
Thursday – Turkey Meatloaf Stuffed Peppers
Friday – Skillet Chicken with Cream Cilantro Lime Sauce (NEW recipe edited to be dairy and gluten free), Asparagus, Basmati Rice
Saturday – Southwestern Steak Salad
Sunday – Dinner Out
