The Weekly Menu Dec. 19 #glutenfree #menuplanning

Hello everyone!  Well it is Christmas week and 2016 is almost over.  Woohoo!  We really like to celebrate with food and indulge in some of our favorites this time of year.  So the menu this week is pretty decadent and we’re going out to dinner a couple times, too.

I really want to see the Warhol exhibit at the Blanton Museum.  And so we’ll probably go back to Freedmen’s BBQ since we’ll be close to the UT campus/school is out/it’s so good!  And we’re thinking BBQ at The Salt Lick for Christmas Eve.

So like I said – decadence!

But it is always gluten free and mostly dairy/casein free (except for parmesan and goat feta cheese) and as organic and non-GMO as possible.  All these dietary adjustments and probiotics have really improved our health this year.  And believe it or not, my allergies have really calmed down as the numbers of mold spores and pollen are off the charts.

I was gluten-ed a few weeks ago and it was so weird.  Besides getting sick and my digestive system reacting to it, my lungs felt like I had asthma again (so heavy and hard to breathe) and the horrible brain fog came back.  I couldn’t remember words and it was just so frustrating.

I do wonder if it is more than the gluten – perhaps glyphosate, antibiotics or pesticides affecting our gut microbiome – especially for people with gluten sensitivity and not the genetic Celiac disease.  There is a lot of current research connecting the gut microbiome to brain function and well everything…

I’ve been invited to do a podcast with a medical doctor and I think I want to talk about food choices.  What do you think?  Would that be interesting?  I’m going to write up a list for next week’s blog post with the basic checklist I go through when deciding what to eat.  How to “healthify” our favorite comfort foods and come up with a fun but healthy menu each week.

Tuesday – BBQ Chicken Nachos

Wednesday – Spinach Salad with Spicy Chicken, Grapefruit, Goat Cheese Feta

Thursday – Freedmen’s BBQ

Friday – Chicken Andouille Sausage Gumbo & Basmati Rice

Saturday (Christmas Eve) – Salt Lick BBQ

Sunday – Beef Tenderloins, Roasted Sweet Potatoes, Asparagus & Faux Béarnaise Sauce

Breakfast – Blueberry Muffins
