Hello everyone.  I’m ready for this election to be over – how about you!?  We voted early so we don’t have to worry about it on Tuesday.  But we’ll be watching all the election coverage so I thought why not have something comforting cooking in the kitchen filling the house with lovely smells, happy thoughts and happy bellies…

And then I just have to plan out the rest of the gluten free, casein/dairy free menu for the week… and I’m pretty excited about the “healthified” comfort food recipes we have coming up!  And that we might actually have some cool weather here in Austin.

Meatless Monday – Creamy Sun-Dried Tomato Basil Spinach Penne Pasta (working on a new recipe using ghee, oat flour and almond milk creamer to make the creamy sauce)

Tuesday ?? – Classic Comfort Beef Stew

Wednesday – Greek Salad with Salami & Dolmas

Thursday – Braised Short Ribs & Gnocchi (using Conte’s Pasta premade potato gnocchi)

Friday – Anaheim & Poblano Chicken Stew (using this recipe for Hatch Chicken Stew as a guide)

Saturday ? – King Ranch Chicken Casserole

Sunday – Leftovers

Breakfast – Sweet Potato Casserole Muffins

Hi! I'm Deana. This food blog is all about cooking wholesome real food and developing gluten free recipes for some of our favorite comfort foods. I also create weekly menus to save time and money while reducing stress and food waste. I had to start eating gluten-free in 2010 and dairy/casein-free (except for the occasional Parmesan or goat cheese) in 2014. I'm kind of a science nerd, too. In the '90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook 'em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course.
