Hi all!  Weekly menu time again.  Last week was pretty interesting for us.  Lots of turning wheels and good stuff going on.

I’m halfway through the Fall semester, but decided to switch to an audit of Practical Intro to Metagenomics.  It is a fascinating class but the programming part of the class is too overwhelming for my elementary coding skills.  I’m not trying to become a program developer and this was an elective.  So I can still learn about the human microbiome project, Cloud Computing and some other great things without the “practical” part of the class.  So until next semester, I’m gonna have a little more free time… ?

We are really excited about trying out Frank this week.  We also have the Texas Monthly BBQ Fest coming up at the end of the month.  Oh yeah!  And since we live close by we are going to try to hit the 104.9 THE HORN – RICKY, KASEY & ERIN LIVE Show at Moontower Saloon.

I’m going to get a facial and massage at Avant Spa next week.  I really, really need it!

They finally fixed our AC, which has been breaking down over the last several weeks.  And it has not been cool enough here in Texas to go without the AC.  So hopefully the leaks are sealed and we are good to go.  Because I really love this apartment and don’t want to have to move anytime soon.

So back to food and our menu plan for the week.  The weekly menu is always going to be gluten free, mostly dairy/casein free (except for the Parmesan cheese), while avoiding GMOs (because of the residual glyphosate), keeping it as organic as possible and low fructose… but always a fun “healthified” version of our favorite comfort foods!  So here we go ~~~~~

Meatless Monday – Giada’s Pasta Primavera (cut the recipe in half, using Ancient Grain Quinoa Pasta)

Tuesday – Spinach Salad with Warm Bacon Dressing & Roasted Chicken

Wednesday – Dinner Out (going to try the artisan sausages & waffle fries at Frank)

Thursday – Eggs Benedict 

Friday – Steaks, Faux Béarnaise Sauce, Asparagus & Spiced Roasted Potatoes

Saturday – Chicken Andouille Sausage Gumbo & Basmati Rice

Sunday – Asian Turkey Burgers & Veggie Fries (on the menu again because we had pizza instead last week)

I had to start eating gluten-free in 2010 and dairy/casein-free (except for the occasional Parmesan or goat cheese) in 2014. I’m kind of a science nerd, too. In the ’90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook ’em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course.
