Hello everyone! Happy Fall! 🍂🍁🍂 I hope you had a great week. It’s time for the weekly menu + recipes again! This week we are trying a couple new things because the cravings just wouldn’t go away. I don’t know why, but I’ve been craving egg rolls and dumplings. Maybe it was the sweet chili sauce that made me miss egg rolls. Or maybe it was a commercial on game day. Or something I saw on twitter.
So we started to look around and Feel Good Foods actually makes gluten-free and dairy-free egg rolls and dumplings. So we ordered some. They are filled with veggies and we aren’t frying them in anything bad so I think they are borderline “clean” but regardless I am pretty excited! And then there is the Whataburger inspired fried chicken salad with ranch dressing (vegenaise, of course).
Ya, I’m definitely blaming it on the game day commercials…
So here is the gluten-free, dairy-free, and “healthified” comfort food weekly menu and recipes:
The Weekly Menu
Meatless Monday – Gluten/Dairy Free Egg Rolls & Dumplings, Veggies, Sweet Chili Sauce and Cantonese Style Dumpling Sauce (using GF liquid aminos instead of soy)
Tuesday – Sausage & Cabbage with Mashies (using adells gluten/casein free andouille sausage)
Wednesday – Buffalo Meatballs & Green Beans (using certified GF oats instead of breadcrumbs)
Thursday – Asian Chicken Salad
Friday – Beef Stew
Saturday 🏈 – Whataburger-Style Salad with Fried Chicken Tenders & Vegenaise Ranch Dressing
Sunday – Tacos
