The Weekly Menu July 11 #glutenfree #menuplanning
Hi everyone! I was so excited that my gluten free P.F. Chang-y lettuce wrap recipe and photo were published in the food section of the paper! It was a great piece by Addie Broyles, an awesome food writer for the Austin American Statesman. She has also created fun food related projects on Instagram like #Austin360cooks and the #theyearofbaking. Here’s the link to the article with a great Whole30 idea for tacos from the Smoking Ho, too! http://food.blog.mystatesman.com/2016/07/05/austin360cooks-jicama-tacos-knocking-off-p-f-changs-lettuce-wraps/
At the bottom of the article you can check out lots of great dinner ideas from Austin360Cooks – because sometimes “what’s for dinner?” needs a little inspiration! #dinspiration
So my digestive system is actually doing a little better on the low FODMAP diet (still also gluten, totally dairy and casein free except for the Parmesan). I’ve learned a lot more about food this week, too:
- basically all my spice blends have garlic or onion powder in them – so I need to revamp all the homemade blends I use
- ketchup, hot sauce, curry paste and lots of condiments have garlic or onion powder in them – I wonder where it comes from???
- garlic infused olive is oil is awesome
- I used to eat a lot of high FODMAP veggies, fruit, nuts, beans, honey… basically the whole “AVOID” list
So we are going to continue this diet for awhile until I feel better. It’s a process but these weekly menus help make my life so much easier.
The Weekly Menu
Monday – Breakfast Tacos for Dinner (eggs, potatoes, turkey sausage, El Milagro corn tortillas)
Tuesday – Gnocchi & Italian Turkey Sausage in Lemony Pan Sauce (garlic infused olive oil, ghee, lemon juice, water, oat flour)
Thursday – Chicken & Rice Turmeric Soup
Friday – Chicken & Eggplant Parmesan (using homemade sauce with no onions or garlic)
Sunday – Greek Salad (no shallots, make the dressing without the onion powder and using garlic infused olive oil instead of garlic powder)
Me after trying to figure out what to eat next week….
Have a great week everyone!
