It’s time for the weekly menu again! Lots of dairy free and gluten free real food options, dinner ideas and recipes! It’s definitely an #EatTheRainbow kind of week with some of our favorite dishes!
Meatless Monday – Six Layer Dip Tostadas (El milagro tostadas, refried beans, avocado, Vegenaise + taco seasoning, green onions, olives and homemade salsa)
Tuesday – Ancho Lime Fajitas (El milagro corn tortillas, grilled onions and pepper, homemade guacamole)
Wednesday – BBQ Chicken Tacos with Cabbage Slaw (although I am going to try to copy the slaw we had at Freedmen’s because it was amazing – grilled cabbage, cider vinegar, caraway seeds, cilantro and honey)
Thursday & Friday – Carnitas (Pork Butt) Burrito Bowls with Avocado Verde Sauce and Cilantro Lime Rice
Saturday – Baked Potatoes, Steamed Broccoli and Ground Turkey Chili (a little browned ghee on the potatoes takes this to another level!)
Sunday – Salad Nicoise
Breakfast – Chocolate Zucchini Muffins
