The Weekly Menu Jan 4

The game plan for the weekly menu hasn’t changed much from last year – we’re keeping it homemade, clean and fun!

We love to cook at home and choose real food that is mostly organic, non-GMO (to avoid trace glyphosate), dairy/casein free (except for the Parmesan cheese) and totally gluten free (GF)!

It’s all about cooking with lean proteins, healthy grains and lots of organic veggies. It’s a little bit Texas flair based on a Mediterranean diet (for the most part). We aren’t into depriving ourselves of some of our favorite comfort foods – they’ve just been “healthified” to remove additives, preservatives, random chemicals, dyes, and most processed ingredients. Our fats are mainly a good quality pure extra virgin olive oil, some coconut oil and homemade ghee.

I usually cook only enough for two people to avoid wasting food, but since my husband has a gig working from home some of these dinners are going to make great lunches the next day, too. We are really looking forward to those leftover lunches (lettuce wraps, burrito bowls and easy meat sauce). Yum!

So here is the weekly menu to kick off the new year –

Meatless MondayEggplant PF Chang-y Lettuce Wraps
(using all organic veggies, substituting eggplant for ground turkey and 3 tbsp non-GMO GF liquid aminos for the 4 tbsp GF soy sauce in the homemade hoisin sauce)

Tuesday – Caesar Salad with Roasted Chicken
(1 roasted natural bone-in chicken breast, organic romaine lettuce, Parmesan cheese, GF croutons and La Madeleine GF Caesar dressing–> and yes, this in not the “cleanest” meal but it’s really good and a treat we only have once in awhile)

Wednesday – Carnitas Burrito Bowls with Homemade Avocado Verde Sauce and Cilantro Lime Rice
(using all organic veggies, non-GMO corn, Basmati rice from India because it contains the least amount of arsenic, homemade red salsa and lean pork shoulder)

Thursday – Buffalo Chicken Salad
(with homemade GF Buffalo Sauce, 1 roasted natural bone-in chicken breast and organic veggies)

Friday – Easy Meat Sauce with non-GMO GF pasta

Saturday – Bison Burgers with Homemade GF Hamburger Buns and Roasted Spiced Potatoes

Sunday – Breakfast for Dinner (eggs, bacon, home fries and avocado)

I had to start eating gluten-free in 2010 and dairy/casein-free (except for the occasional Parmesan or goat cheese) in 2014. I’m kind of a science nerd, too. In the ’90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook ’em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course.
