The Gluten Free Weekly Menu Oct. 19 #menuplanning
We finally made it out to a Johnson’s Backyard Garden Farmer’s Market! We bought these beautiful organic sweet peppers, lettuce and cherry tomatoes. Of course most is going into salads, but I’m looking forward to using some of the sweet peppers in the turkey and veggie chili tonight! Although, I wasn’t totally convinced every veggie has to be organic – I’m really starting to notice a big difference in the way my body digests organic versus conventional vegetables. Whatever it is, it seems like washing the veg wasn’t doing the trick with tomatoes, cucumbers, peppers and lettuce. So organic it is! And I’m happy to support a local farm, too. And as an added bonus, my backyard potted cucumber plant is still growing and producing cukes like crazy! 🌿
Last week we went walking around LadyBird/Town Lake kinda late so we drove by Torchy’s Tacos to pick up dinner instead of cooking, so the meal plan is getting shifted over a day. We usually do a Meatless Monday, but we are going to do Sunday’s planned dinner instead. The rest of the week is set up so that I can use up some of the stuff in the fridge and freezer. We are going to use homemade pickled jalapeños in the creamed corn and then marinate chopped onions over night in the remaining pickling juice to make “Salt Lick” potato salad the next day. I’m also using some homemade coconut milk I had frozen for the creamed corn, but taking out 5 teaspoons to use for the homemade blender Hollandaise sauce. There is a method to my madness – sometimes! 🙂 Anyway, most of these recipes are in my eCookbooks, which are still on sale (the Kindle Versions) – including copy cat version of the Salt Lick BBQ Potato Salad.
Fun Fact: We’ve walked almost all of the trails all the way around the lake now! There is a great app called ATX trails to help you find fun new places to explore around the lake. #touristinmyowntown

Wednesday – Chicken Andouille Sausage; “Salt Lick” Potato Salad; Red Cabbage Slaw
Thursday – Eggs Benedict with Casein Free Hollandaise; Asparagus
Friday – Southwestern Grass-fed Steak Salad
Saturday – 🏈 Chicken & Veggie Fajita Tacos with Homemade Guacamole
Sunday – Italian Turkey Meatballs & Pasta
