The Gluten-Free Weekly Menu June 22 #menuplanning

Hope all the dads out there are enjoying your day! This summer is going by so fast. I haven’t even been to the pool yet… one of the best perks of luxury apartment living. We did manage to get out to the Austin Boardwalk/Butler Trail for a good, long detoxing walk although it was pretty humid and I’m hurting a little bit now. It’s been a few weeks since we’ve done a 5-mile walk so it was nice to get out there and push ourselves. #fitnessafter40

Last week I took my doggies (12 & 13) to the vet for their shots and check ups. I’m usually very calm and laid back but as they’ve gotten older, I get extremely anxious about the vet visits. I do love this vet (and we’ve been to many over the years moving around in Houston, Chicago and Austin) because they don’t overcharge and are really great with the animals. Three years ago in Houston, I almost lost Cassidy when she went into anaphylactic shock from allergic reaction to the shots. But this year we got the pre-shot and other than a doggie panic attack everything went well. Benji has been really sick and at first we thought it might be food allergies or a yeast infection – but blood tests indicate hypothyroidism. So meds are on the way and hopefully everything will improve. My sweet old fur babies are taking 3-4 pills each a day but as long as they are happy and comfortable things are good. And I’ve started feeding them some pretty gourmet doggie plates – a little yogurt, cooked green veggie, cucumbers, shredded organic carrots and maybe a few blueberries or melon. Yep.

This week bone-in split chicken breasts are on sale at HEB so we are stocking up and freezing them. And that means it’s also going to be a chicken inspired menu this week. 🙂

FridaySpaghetti & Meatballs; Caesar Salad (Harriet’s All-Natural or La Madeline are GFDF)

Saturday – Game Night at Anthony & Kevin’s Place! (they are going to be grilling burgers and hot dogs but grilling can be a little dicey when it comes to cross-contamination so we’ll probably eat at Maudie’s Tex-Mex first because it is always safe and take some GFDF chocolate chip cookies to share)

Sweet Potato Brownies

Sunday – Chicken Caesar Salad; Sweet Potato Brownies (delish allergen-friendly recipe is eggless, gluten free, casein free, nut free, soy free)

Hi! I'm Deana. This food blog is all about cooking wholesome real food and developing gluten free recipes for some of our favorite comfort foods. I also create weekly menus to save time and money while reducing stress and food waste. I had to start eating gluten-free in 2010 and dairy/casein-free (except for the occasional Parmesan or goat cheese) in 2014. I'm kind of a science nerd, too. In the '90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook 'em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course.
