The Gluten Free Weekly Menu May 18

It’s been raining a lot here in Austin and my patio garden is going crazy. Especially, my cucumber plant that I started from a seed. It loves this weather and I’m hoping to actually grow some cucs for the first time! I’m growing a tomato plant with the basil, but then I found another one at the HEB with tons of beautiful little tomatoes so we added it. The dream is to grow all the veggies for my Greek salads on the patio (minus the lettuce) and make my own pepper sauce from red jalapeños. We shall see!

Wednesday – Easy Meat Sauce and Mini Lasagna Noodles
Thursday – Roasted Chicken with Seasoned Salt & Sumac (will post recipe soon); Roasted Veggies & Spiced Potatoes
Friday – Dinner out with the MIL
Saturday – Veggie and Chicken Fajita Tacos
