The Gluten-free Weekly Menu May 11
Hi everyone! Hope you have a lovely Mother’s day. The day is difficult when you’ve lost your mother, but I try to focus on the positive not the loss. I try to recount the many things for which I am very grateful and, of course, love on my fur babies! 🙂
So summer is coming and school gets out soon so I’m sure many of you are looking forward to that!
But one of things that I worry about are the kids faced with food insecurity, especially during the summer. The number of children who struggle with hunger is staggering – 1 in 5. Summertime is really hard for kids because they just don’t know where their next meal is coming from. So I set up a fundraiser for No Kid Hungry to help raise some money. If we can raise at least $500, it will provide 5000 meals (a modest limit for now).
Also, consider donating to your local food shelter. We set up a donation for the Capital Area Food Bank in Austin for our wedding. People were very generous with donations and it goes a long way!

Wednesday – Cobb Salad (dressing in The Weekly Menu I & eCookbook)
Thursday – Summer Pasta Salad with Homemade Italian Dressing (The Weekly Menu eCookbook)
Friday – Grass-Fed Sirloin Steaks; Roasted Sweet Potatoes; Parmesan Brussels Sprouts (The Weekly Menu I)
Saturday – Turkey Veggie Chili
Sunday – Sausage, Roasted Peppers & Cabbage; Pineapple Upside Down Cake (testing out a new recipe)
