The Gluten-free Weekly Menu May 11

Hi everyone! Hope you have a lovely Mother’s day. The day is difficult when you’ve lost your mother, but I try to focus on the positive not the loss. I try to recount the many things for which I am very grateful and, of course, love on my fur babies! šŸ™‚

So summer is coming and school gets out soon so I’m sure many of you are looking forward to that!

But one of things that I worry about are the kids faced with food insecurity, especially during the summer. The number of children who struggle with hunger is staggering – 1 in 5. Summertime is really hard for kids because they just don’tĀ know where their next meal is coming from. So I set up a fundraiser for No Kid Hungry to help raise some money. If we can raise at least $500, it will provide 5000 meals (a modest limit for now).

Also, consider donating to your local food shelter. We set up a donation for the Capital Area Food Bank in Austin for our wedding. People were very generous with donations and it goes a long way!

Hi! I’m Deana. This food blog is all about cooking wholesome real food and developing gluten free recipes for some of our favorite comfort foods. I also create weekly menus to save time and money while reducing stress and food waste. I had to start eating gluten-free in 2010 and dairy/casein-free (except for the occasional Parmesan or goat cheese) in 2014. I’m kind of a science nerd, too. In the ’90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook ’em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course.
