The Gluten-Free Weekly Menu April 6

I love April! Spring is my favorite time of year! Our patio garden (herbs, cherry tomatoes, jalapeños and cucumbers) is looking good and my grapevine is growing. It’s a zinfandel vine I bought a few years ago and it should fruit this season. We’ve made our own wine before from juice concentrate, but I want to learn how to make it from the grapes. Right now I’m just observing how this vine thrives and what kind of fruit it produces. We hope to have a small vineyard (at least in our backyard) at some point. We love our wine! We even spent our honeymoon in northern California wine country and rented a house deep in the Dry Creek Valley. It was amazing – I need to make a picture gallery of the pics to reminisce.

So of course, it shouldn’t be a surprise that one of my favorite April activities is the Wine & Food Festival! It comes to Austin on my birthday weekend every year. A group of us have gone for the last 7 years – there have been marriages, babies born, happy new couples, new jobs and businesses… you know, life. But we all try to get together for this fabulous & fun weekend! A friend is flying in again this year and we are really looking forward to catching up, adult day drinking and tasting all that great food. I usually eat something before I go, but there are lots of food trucks and gluten-free options for the tastings. So fun!

Anyway, here is the casein-free (except for the Parmesan), gluten-free weekly menu for April 6:

Avocado Kale Salad

Meatless Monday – Kale, Avocado & Toasted Nut Salad with Honey Apple Cider Vinaigrette

TuesdayCheeseburger with Caramelized Onions (using our favorite new casein-free vegan Chao cheese) & Roasted Spiced Potatoes

Chicken Tortilla Soup

Wednesday – Chicken Tortilla Soup (in The Weekly Menu I & Cookbook)

Thursday – Ancho Chili Lime Chicken Tacos with Avocado, Mango and Grilled Poblano & Jalapeño Peppers (for the chicken just roast it then shred and sprinkle with Ancho chili powder and lime juice)

Pasta Carbonara

FridayPasta Carbonara (this is not casein-free because I use Parmesan cheese)

Carnitas Tacos

Saturday – Carnitas Tacos, Grilled Onions, Avocado Verde Sauce and Cilantro Lime Rice (in The Weekly Menu Cookbook) – there will be lots of leftovers

Sunday – Thai Beef Salad (in The Weekly Menu Cookbook & will blog the recipe soon); Sweet Potato Brownies
