The Gluten-Free Weekly Menu Jan. 26

This is a fun week for us because we are celebrating our 4th wedding anniversary! And there is that big game on Sunday, too! I’m really excited to see the Seahawks play the Patriots. We love football – maybe it’s a Texas thing but I’ve been watching my entire life and some of my favorite family memories are tied to football games. One of my favorites was watching Ricky Williams break the rushing record with my grandfather on Thanksgiving. I earned my undergraduate degree at The University of Texas in Austin and I’m a huge Longhorn fan (I bleed burnt orange as they say) and really look forward to the rebuilding years ahead under coach Strong. Hook ’em!

February 1st is also the 22nd anniversary of my mother’s death. The holidays are always the most difficult time of the year for me because we were told she only had a few months to live a few days before Christmas. So it’s always a painful time even this long after her death, but then after February 1st I start to feel better and then spring is right around the corner. This year I’m working on a blog I’ll post on that day to honor her with some old pictures I’ve scanned and my thoughts on healing as well.

Anyway, the menu for this week is pretty simple and naturally casein-free (except for the Parmesan cheese), gluten-free weekly menu for January 26:

Monday – Roasted & Steamed Veggie Hodgepodge with Balsamic Dressing (roasted carrots, potatoes, sweet potatoes, Brussels sprouts; steamed broccoli, green beans, asparagus; and a shallot) for #MeatlessMonday

Gluten-free Dairy-Free "Beef" Stroganoff

Tuesday“Beef” Stroganoff (using ground turkey and GF corn pasta)

Wednesday – Anniversary dinner out!

Grass-fed Steak Salad Loaded with Veggies

Thursday – Southwestern Steak Salad (with grass-fed sirloin)

Chicken Eggplant Parmesan

Friday – Chicken and Eggplant Parmesan (this is not casein-free but can be made without the Parmesan cheese and is still very tasty – recipe in The Weekly Menu I eCookbook)

Saturday – Chicken Andouille Sausage Gumbo with Basmati White Rice (in The Weekly Menu I & Cookbook)

Sunday – Oven-Roasted BBQ Ribs and Coleslaw (in The Weekly Menu I), Oven-Baked Onion Rings (coated in corn chip crumbs #nochipwasted – a great idea from a friend!)

I had to start eating gluten-free in 2010 and dairy/casein-free (except for the occasional Parmesan or goat cheese) in 2014. I'm kind of a science nerd, too. In the '90s, I earned an undergrad degree in biochemistry from The University of Texas at Austin. Hook 'em! Then followed up with a PhD in biochemistry and a law degree from the University of Houston. I recently earned a certificate in genomics/sequence analysis from Johns Hopkins University, where I also took a very cool food microbiology course.
