Saturday – Spicy Apricot Chicken Stir-fry (broccoli, red & yellow bell peppers) with Brown Rice
Sunday – Ground Turkey Sloppy Joes with Kale Chips
Lemon Blueberry Muffins
Monday – Turkey Meatballs, GF Spaghetti and Red Sauce; Salad with Oil & Vinegar
Tuesday – Southwestern Salad with Grilled Chicken and Texas Red Wine Vinaigrette (from my eCookbook)
Wednesday – Cider-Brined Pork Tenderloin with Roasted Apples and Carrots (also from Food & Wine); Fancy Green Beans
